.%3C/p%3E%3Cp%3EAs%20it%20shoots%20up,%20it%20begins%20to%20loop%20around%20and%20form%20these%20wonderful%20curlicues%20before%20the%20flower%20at%20the%20end%20opens.%20They%20can%20also%20double%20as%20avant-garde%20jewelry%20--%20Medusa%20would've%20loved%20these%20babies...%3C/p%3E%3Cp%3EIf%20you're%20growing%20hard-necked%20garlic%20(it's%20so%20easy%20to%20grow%20your%20own%20garlic%20-%20you%20should%20try%20it!),%20you%20want%20to%20cut%20the%20scapes%20off%20before%20the%20flowers%20open%20as%20that%20will%20preserve%20more%20energy%20for%20the%20plant%20to%20make%20the%20bulb%20(a.k.a.%20the%20head%20of%20garlic%20you'll%20harvest%20in%20a%20month%20or%20two)%20bigger.%3C/p%3E%3Cp%3EBut%20don't%20throw%20them%20away%20once%20you've%20snipped%20them%20'cause%20garlic%20scapes%20are%20also%20good%20to%20eat.%20They%20have%20a%20nice%20flavor%20that%20is%20garlicky%20(shocker,%20huh?)%20but%20mellower%20than%20mature%20garlic.%20You%20can%20stir-fry%20them,%20steam%20them%20and%20eat%20with%20butter,%20pickle%20them%20(post%20coming%20soon!),%20sautee%20them%20and%20MAKE%20PESTO%20OUT%20OF%20THEM!%3C/p%3E%3Cp%3EWe%20had%20a%20rather%20large%20bunch%20of%20these%20after%20our%20first%20CSA%20pick%20up%20of%20the%20year%20because%20I%20had%20lost%20my%20head%20at%20the%20Kingston%20Farmers%20Market%20over%20the%20weekend%20before%20the%20pick%20up%20and%20bought%20a%20big%20bunch%20of%20them%20(not%20realizing%20they'd%20be%20included%20in%20our%20share.)%20This%20seemed%20like%20the%20perfect%20time%20to%20make%20pesto%20since%20we%20had%20enough%20scapes%20to%20freeze%20some,%20too.%3C/p%3E%3Cp%3EAlthough%20you%20can%20make%20pesto%20with%20just%20the%20scapes,%20I%20chose%20to%20add%20a%20lot%20of%20herbs%20as%20I%20like%20the%20added%20flavor%20and%20also%20tend%20to%20find%20the%20scapes%20by%20themselves%20rather%20intensely%20garlicky.%3C/p%3E%3Cp%3EAs%20with%20any%20pesto,%20amounts%20and%20ingredients%20are%20delightfully%20flexible%20(I%20always%20feel%20a%20little%20silly%20posting%20a%20%22recipe%22%20for%20something%20as%20basic%20as%20pesto...)%20I%20had%20recently%20made%20chimichurri%20(another%20magical%20green%20sauce...)%20so%20I%20used%20some%20of%20the%20leftover%20mint,%20basil,%20parsley,%20and%20oregano%20I%20had%20on%20hand.%20And%20of%20course%20lots%20of%20pinenuts%20(almonds%20or%20walnuts%20would%20be%20good,%20too),%20Parmesan%20cheese,%20olive%20oil%20and%20salt.%3C/p%3E%3Cp%3EThe%20resulting%20pesto%20is%20herby%20with%20a%20decidedly%20allium-induced%20kick%20to%20it!%20Toss%20with%20pasta%20or%20roasted%20veggies,%20drizzle%20over%20grilled%20chicken,%20smear%20on%20some%20crusty%20bread%20and%20eat%20with%20fresh%20mozzarella%20or%20goat%20cheese,%20and%20more.%20Don't%20be%20shy!%3C/p%3E%3Cp%3EGarlic%20Scape%20Pesto%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Put%20the%20scapes,%20herbs,%20pine%20nuts,%20salt,%20pepper%20and%20cheese%20in%20the%20bowl%20of%20a%20food%20processor.%3C/p%3E%3Cp%3E2.%20Process,%20adding%20the%20oil%20a%20bit%20at%20a%20time,%20until%20desired%20consistency.%20Taste%20and%20adjust%20the%20salt%20and%20cheese%20accordingly.%3C/p%3E%3Cp%3E3.%20Use%20right%20away%20or%20store%20in%20an%20airtight%20container%20in%20the%20fridge%20-%20it%20should%20keep%20for%20about%20two%20weeks.%20You%20can%20also%20freeze%20any%20extra%20pesto%20in%20an%20ice%20cube%20tray%20and%20then%20transfer%20to%20a%20freezer%20bag%20for%20much%20longer-term%20storage.%3C/p%3E){kind=link}
