  1. Cook garlic in oil over low heat in small skillet for 5 min. Add in onions and cook till crisp tender. Stir in salt and pepper. Remove from heat and cold thoroughly. Trim all excess fat from steak. To cut pocket in steak, make a horizontal cut through the center of the steak, about 1 inch from each side. Cut to but not through. to opposite side. Spoon cooled stuffing into pocket, spreading proportionately. Secure opening with wood picks. put on grill to desired doneness.
