- 1-1/2 cups warm water (110 degrees Fahrenheit)

- 2 tablespoons olive oil
- 3-1/3 cups all-purpose flour
- For the Pizza:
- 1/4 cup olive oil
- 1/2 teaspoon crushed red pepper
- 8 garlic cloves, minced
- 4 basil leaves, minced
- 1-lb container part skim ricotta cheese
- 1/4 teaspoon salt
- 8 ounces shredded chicken breasts
- 2 cups part skim mozzarella cheese
- fresh basil leaves, slices cherry tomato (Optional)
- black pepper to taste

.%3C/p%3E%3Cp%3EGarlic%20White%20Chicken%20Pizza%3C/p%3E%3Cp%3Einspired%20by%20Cooking%20Light%3C/p%3E%3Cp%3EPublished%2003/02/2014%3C/p%3E%3Cp%3ESingle%20serving%20sized%20pizzas%20that%20are%20packed%20with%20garlic%20and%20cheesy%20goodness!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20dough:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ETo%20make%20the%20pizza%20dough:%20In%20the%20bowl%20of%20a%20kitchen%20aid%20mixer%20with%20dough%20attachment%20(or%20you%20can%20do%20this%20by%20hand%20if%20you%20do%20not%20have%20a%20kitchen%20aid),%20dissolve%20water,%20yeast%20and%20brown%20sugar.%20Let%20sit%20about%2010%20minutes.%3C/p%3E%3Cp%3EAdd%20salt%20and%20olive%20oil,%20turn%20on%20mixer%20and%20stir%20to%20combine.%20Gradually%20add%20flour,%201%20cup%20at%20a%20time,%20until%20dough%20forms%20a%20ball.%20Continue%20to%20knead%20in%20kitchen%20aid%20another%203-4%20minutes.%20Dough%20should%20not%20stick%20to%20the%20sides%20of%20the%20mixer.%20If%20this%20happens,%20add%20a%20little%20bit%20more%20flour,%20a%20tablespoon%20at%20a%20time%20until%20it%20pulls%20away%20from%20the%20side.%20(note:%20I%20did%20not%20have%20to%20do%20this%20and%20used%20the%20full%203-1/3%20cups%20of%20flour).%3C/p%3E%3Cp%3ERemove%20dough%20from%20mixer%20and%20knead%20a%20few%20times,%20shape%20into%20a%20ball%20and%20place%20in%20greased%20bowl,%20turning%20to%20coat%20dough%20with%20oil.%20Cover,%20and%20let%20set%20until%20double%20in%20size,%20about%201%20hour.%3C/p%3E%3Cp%3ETo%20make%20the%20topping:%20In%20a%20medium%20sized%20saute%20pan%20over%20medium%20heat,%20saute%20the%20garlic,%20red%20pepper,%20and%20basil%20in%20the%20olive%20oil%202-3%20minutes,%20being%20careful%20not%20to%20burn%20the%20garlic.%20Remove%20from%20heat%20and%20set%20aside%20to%20cool%20about%2010%20minutes.%20You%20can%20strain%20the%20oil%20to%20remove%20the%20garlic,%20basil%20and%20red%20pepper%20particles,%20but%20I%20opted%20to%20leave%20them%20in%20the%20oil.%3C/p%3E%3Cp%3EOnce%20the%20oil%20has%20cooled,%20combine%20the%20infused%20oil%20with%20the%20ricotta%20cheese.%20Set%20aside%20until%20ready%20to%20assemble%20the%20pizza.%3C/p%3E%3Cp%3EWhen%20dough%20is%20ready,%20punch%20with%20your%20fist%20down%20to%20deflate.%20Cut%20dough%20in%20half,%20then%20cut%20each%20half%20in%20half%20again,%20two%20times.%20This%20will%20give%20you%20eight%20portions%20of%20dough.%20Form%20each%20portion%20into%20an%20individual%20round%20circle%20and%20place%20on%20pizza%20stone.%20I%20can%20fit%204%20individual%20pizzas%20on%201%20stone.%20If%20you%20are%20feeding%20more%20than%204%20people,%20then%20you%20may%20need%20to%20use%20this%20process%20twice%20if%20you%20don%E2%80%99t%20have%20a%20big%20enough%20stone.%20You%20can%20also%20use%20a%20parchment%20lined%20cookie%20sheet,%20but%20the%20pizza%20stone%20gets%20the%20best%20results.%3C/p%3E%3Cp%3EOnce%20the%20pizzas%20are%20formed,%20place%20a%20heaping%20tablespoon%20on%20top%20of%20dough%20and%20spread%20out%20to%20cover%20dough.%20Top%20each%20dough%20round%20with%201/4%20cup%20of%20mozzarella%20cheese%20and%202%20ounces%20of%20chicken.%20Sprinkle%20with%20basil%20leaves%20and%20ground%20pepper%20if%20desired.%3C/p%3E%3Cp%3EBake%20at%20450%20degrees%20for%208%20minutes,%20or%20until%20dough%20is%20golden%20and%20cheese%20is%20browned.%20Continue%20procedures%20until%20all%20pizzas%20are%20baked.%3C/p%3E%3Cp%3EYield:%208%20individual%20pizzas%3C/p%3E%3Cp%3EPrep%20Time:%2001:20%3C/p%3E%3Cp%3ECook%20time:%2000:08%3C/p%3E%3Cp%3ETags:%20cheese,%20Italian,%20pizza,%20garlic,%20single%20serving%20sized,%20cooking%20for%20two,%3C/p%3E){kind=link}
