Ingredientes

  • 6 x fresh, ripe tomatoes (diced)
  • 2 x bell peppers (seeded)
  • 1 x cucumber (peeled and seeded)
  • 2 x cloves of garlic
  • 1 x onion (minced) jerez vinegar (to taste) fresh mint (to taste)
  • 1 x salt (to taste)
  • 1 x pepper (to taste)
  • 1 quart tomato juice
  • 3 x slices toast

Direcciones

  1. Place tomatoes, bell peppers, cucumber, garlic, and onion into a blender. Season with salt, pepper, jerez vinegar, fresh mint. Add in tomato juice and toast. Blend till smooth.
  2. Sieve in a medium thin sieve.
  3. Taste to adjust seasoning if necessary.
  4. Add in all remaining ingredients and simmer at low heat for 8-10 min.
  5. Refrigeratewell and pour into a sherbet machine till the desired consistency is reached. If you don't have a sherbet machine, pour the gazpacho in sheet pans and let it freeze in the freezer. Then scrape the frzn gazpacho with a fork.
