- (Georgia calls for this; Ada omits any sugar; I added about a tablespoon of honey.)
- Lemon juice to taste

%3C/p%3E%3Cp%3ESo,%20this%20year%20we%20got%20back%20at%20him%20and%20sent%20him%20some%20Lou%20Malnati%20pizzas%20from%20Chicago.%20%20%20That%20will%20teach%20him%20not%20to%20play%20fair!%3C/p%3E%3Cp%3EWhere%20is%20this%20all%20going?%3C/p%3E%3Cp%3EWell,%20we%20received%20some%20fabulous%20pears%20and%20apples%20in%20our%20annual%20Harry%20&%20David%20box%20this%20year.%20%20%20%20We%20ate%20a%20couple%20of%20pears%20and%20then%20promptly%20left%20for%20our%20Santa%20Fe%20trip.%20%20%20%20%20When%20we%20returned,%20I%20found%20some%20apples%20that%20desperately%20needed%20used.%3C/p%3E%3Cp%3EKeeping%20in%20my%20Santa%20Fe%20frame%20of%20mind,%20I%20grabbed%20one%20of%20my%20favorite%20books,%20A%20Painter%E2%80%99s%20Kitchen:%20%20%20Recipes%20from%20the%20Kitchen%20of%20Georgia%20O%E2%80%99Keeffe.%20%20%20%20There%20I%20found%20her%20simple%20applesauce%20recipe.%20%20%20She%20apparently%20claimed%20to%20have%20had%20the%20%E2%80%9Cbest%20applesauce%20tree%20around%E2%80%9D%20at%20her%20Abiquiu%20property.%3C/p%3E%3Cp%3E(This%20is%20Ada%E2%80%99s%20secret%20ingredient.)%3C/p%3E%3Cp%3EWash%20and%20quarter%20apples.%20%20%20DO%20NOT%20PEEL.%20%20Everyone%20is%20in%20agreement%20on%20this,%20but%20Georgia%20says%20to%20NOT%20core%20them.%20%20%20Ada%20is%20a%20corer.%3C/p%3E%3Cp%3EPlace%20apples%20in%20a%20large%20kettle%20with%20a%20small%20amount%20of%20water.%20%20%20Simmer%20until%20they%20are%20soft.%20%20%20(If%20you%20want%20to%20add%20honey,%20do%20it%20now.)%3C/p%3E%3Cp%3ECool%20and%20then%20press%20through%20a%20food%20mill.%20%20%20Georgia%20then%20would%20add%20her%20sugar.%20%20%20%20Ada%20would%20add%20her%20vanilla.%3C/p%3E%3Cp%3EThe%20simplicity%20of%20this%20dish%20is%20delicious.%3C/p%3E%3Cp%3EYou%20would%20not%20believe%20how%20the%20vanilla%20enhances%20the%20flavor.%20%20%20I%20can%E2%80%99t%20describe%20how%20good%20this%20is.%3C/p%3E%3Cp%3EAda%20was%20a%20genius!%20%20%20(And%20so%20is%20her%20daughter%20for%20giving%20me%20permission%20to%20share%20her%20secret%20ingredient!)%3C/p%3E%3Cp%3EEliot%20the%20Photographer%20'Applesauce%20with%20Mint%20on%20Apple%20Picking%20Hat,'%202012%3C/p%3E%3Cp%3EA%20Painter%E2%80%99s%20Kitchen%20is%20a%20great%20read%20as%20well%20as%20a%20practical%20cookbook%20full%20of%20simple%20and%20delicious%20and%20healthy%20recipes.%20%20%20I%20would%20love%20to%20be%20just%20like%20O%E2%80%99Keeffe%20when%20I%20am%20aged%E2%80%94-a%20little%20bit%20persnickety,%20a%20lot%20opinionated,%20and%20still%20full%20of%20piss%20and%20vinegar!%3C/p%3E%3Cp%3EA%20special%20thanks%20to%20Suzan,%20a%20good%20friend,%20a%20great%20cook,%20and%20a%20wonderful%20sharer%20of%20foodie%20wisdom.%20%20%20Girl,%20you%20need%20to%20get%20your%20cookbook%20started!%3C/p%3E%3Cp%3ENote:%20%20%20I%20used%20a%20bit%20too%20much%20water,%20so%20I%20felt%20like%20I%20had%20to%20drain%20the%20apples%20a%20bit%20before%20I%20ran%20them%20through%20the%20mill.%20%20%20I%20set%20the%20extra%20liquid%20aside%20while%20I%20forced%20the%20apples%20through%20the%20mill.%20%20%20%20%20I%20kept%20looking%20at%20that%20fragrant%20liquid.%20%20%20Finally,%20I%20dove%20in.%20%20%20It%20was%20the%20best%20warm%20drink!%20%20%20I%20highly%20recommend%20adding%20too%20much%20water%20so%20you%20can%20have%20a%20sip.%3C/p%3E%3Cp%3EIt%20also%20just%20dawned%20on%20me%20that%20I%20left%20off%20the%20Georgia%20O%E2%80%99Keeffe%20Museum%20off%20my%20Santa%20Fe:%20%20Destinations%20post.%20%20%20How%20could%20I%20have%20done%20that?%20%20%20This%20small%20museum%20is%20a%20%E2%80%9Cmust%20stop%E2%80%9D%20every%20time%20we%20go.%20%20%20Please%20add%20it%20to%20your%20list.%3C/p%3E%3Cp%3EI%20will%20leave%20you%20with%20one%20of%20her%20wonderful%20quotes:%3C/p%3E%3Cp%3EI%20have%20picked%20flowers%20where%20I%20found%20them,%20I%20have%20picked%20up%20sea%20shells%20and%20rocks%20and%20pieces%20of%20wood%20where%20there%20were%20sea%20shells%20and%20rocks%20and%20pieces%20of%20wood%20that%20I%20liked.%20When%20I%20found%20the%20beautiful%20white%20bones%20on%20the%20desert,%20I%20picked%20them%20up%20and%20took%20them%20home%20too.%20I%20have%20used%20these%20things%20to%20say%20what%20is%20to%20me%20the%20wideness%20and%20wonder%20of%20the%20world%20as%20I%20live%20in%20it.%3C/p%3E%3Cp%3E%E2%80%94Georgia%20O%E2%80%99Keeffe,%20%201976%3C/p%3E){kind=link}
