Receta German Baked Pancake With Apples

- NOTE: The original recipe used 1 1/2 Tablespoons light margarine... I used nonstickcooking spray.
- NOTE: Original recipe used 4 Tablespoons light honey for the topping.
- NOTE: Original recipe used tart apples, peeled and sliced... I used reddelicious, peeled and grated.
- For the pancake:Preheat the oven to 450 deg F.
- In a bowl, beat the Large eggs, egg beaters (whites), flour, lowfat milk and vanilla till smooth; set aside.
- Spray a non stick round 12" baking dish with the nonstick cooking spray.
- Put it in the oven to heat for about 5 - 7 min. When the baking dish ishot, remove it carefully and pour in the batter and put it back into the oven for 15 min. After baking for 15 min; lower the temperature to350 deg F and bake for an additional 10 min.
- While the pancake is baking for the first 15 min, prepare the apple topping:In a large skillet, combine the honey, cinnamon and nutmeg. Hot over mediumheat till the honey liquefies and mixes with the spices. Add in the apples and heat them till just tender.
- The pancake should have puffed dramatically, especially around the sides.
- Serve immediately, with the topping, before it settles.
- Serves: 4
- This has a wonderful flavor.
