%3C/p%3E%3Cp%3EWritten%20on%2029%20December,%202014%20by%20Kimberly%20@%20The%20Daring%20Gourmet%3C/p%3E%3Cp%3E%E2%80%9CPea%20soup%E2%80%9D%20is%20the%20literal%20translation%20of%20this%20dish%20but%20that%20doesn%E2%80%99t%20even%20begin%20to%20do%20it%20justice.%20%20There%20is%20a%20TON%20going%20on%20here%20flavor-wise.%20%20With%20the%20flavor%20of%20caramelized%20onions%20and%20bacon%20combined%20with%20savory%20leek,%20carrots,%20celeriac,%20potatoes,%20peas%20and%20dumplings,%20this%20is%20a%20hearty,%20satisfying,%20healthy%20and%20thoroughly%20delicious%20soup%20that%20captures%20the%20very%20best%20of%20German%20cooking.%3C/p%3E%3Cp%3EJust%20as%20butter,%20nuts%20and%20lemon%20zest%20are%20integral%20ingredients%20in%20German%20baking,%20there%20are%20several%20ingredients%20that%20combine%20to%20give%20savory%20dishes%20that%20classic%20%E2%80%9CGerman%E2%80%9D%20taste%20we%20know%20and%20love.%20%20Those%20include%20onions,%20bacon,%20leek%20and%20celery%20root%20(aka,%20celeriac).%20%20The%20first%20two%20we%20are%20are%20very%20familiar%20with%20in%20the%20U.S.%20%20%20The%20third%20one%20most%20everyone%20has%20heard%20of%20but%20sadly%20very%20few%20cook%20with%20it,%20and%20the%20fourth,%20celery%20root,%20is%20virtually%20unknown%20here%20though%20you%20can%20find%20it%20in%20most%20grocery%20stores.%20%20And%20that%E2%80%99s%20an%20unfortunate%20thing,%20because%20there%20is%20nothing%20that%20elevates%20a%20soup%20from%20good%20to%20great%20like%20these%20two%20ingredients.%20%20So%20if%20it%E2%80%99s%20been%20a%20while%20since%20you%E2%80%99ve%20eaten%20leek,%20and%20if%20you%E2%80%99ve%20never%20tried%20celeriac%20before,%20this%20is%20the%20perfect%20place%20to%20start.%3C/p%3E%3Cp%3ECoupled%20with%20dumplings%20made%20of%20dough%20similar%20to%20Sp%C3%A4tzle%20but%20scooped%20into%20small%20mounds,%20this%20is%20a%20wonderful,%20filling,%20soul-satisfying%20soup%20for%20any%20time%20of%20the%20year.%3C/p%3E%3Cp%3ELet%E2%80%99s%20get%20started!%3C/p%3E%3Cp%3EJust%20another%20quick%20note%20on%20celery%20root.%20%20It%E2%80%99s%20simply%20marvelous.%20%20Appearance-wise%20it%20looks%20like%20a%20big%20round,%20tan-colored%20root%20vegetable%20on%20the%20outside.%20%20The%20inside%20is%20a%20firm,%20whitish%20flesh.%20%20The%20flavor%20resembles%20celery%20stalks%20but%20not%20quite.%20%20It%E2%80%99s%20sweeter%20in%20flavor%20with%20a%20very%20different%20texture,%20more%20potato-like.%20%20It%20goes%20great%20in%20soups%20and%20there%20are%20some%20fantastic%20creamy%20celery%20root%20salads%20(recipe%20to%20come).%3C/p%3E%3Cp%3EOkay,%20let%E2%80%99s%20get%20to%20that%20soup.%20%20Fry%20the%20bacon%20in%20a%20stock%20pot%20over%20medium-high%20heat%20until%20done.%20%20Add%20the%20onions%20and%20butter.%3C/p%3E%3Cp%3ECook%20the%20onions%20until%20soft%20and%20beginning%20to%20lightly%20brown.%3C/p%3E%3Cp%3EWhile%20the%20onions%20are%20cooking,%20chop%20the%20veggies.%3C/p%3E%3Cp%3EAdd%20the%20veggies,%20peas,%20broth,%20ham%20hock,%20and%20spices%20to%20the%20pot%20and%20give%20it%20a%20stir.%20%20Bring%20it%20to%20a%20boil,%20reduce%20the%20heat%20to%20medium,%20cover%20and%20simmer%20for%2030%20minutes.%3C/p%3E%3Cp%3E*This%20recipe%20uses%20dried%20marjoram,%20another%20common%20ingredient%20in%20German%20cooking%20but%20a%20somewhat%20lesser%20known%20herb%20here%20in%20the%20U.S..%3C/p%3E%3Cp%3EWhile%20the%20soup%20is%20cooking,%20prepare%20the%20dumplings.%20%20Place%20all%20ingredients%20in%20a%20stand%20mixer.%3C/p%3E%3Cp%3EUse%20the%20paddle%20attachment%20on%20%E2%80%9C2%E2%80%9D%20(bread%20setting)%20and%20mix%20until%20it%20comes%20together%20in%20a%20dough%20mass.%3C/p%3E%3Cp%3EContinue%20to%20%E2%80%9Cknead%E2%80%9D%20the%20dough%20with%20the%20paddle%20attachment%20for%20about%208-10%20minutes.%3C/p%3E%3Cp%3EUse%20a%20small%20spoon%20to%20scoop%20off%20small%20pieces%20of%20dough%20(about%202%20teaspoon%E2%80%99s%20worth).%3C/p%3E%3Cp%3EDrop%20the%20pieces%20of%20dough%20into%20a%20pot%20of%20lightly%20salted%20simmering%20water.%20%20They%20will%20float%20to%20the%20bottom.%3C/p%3E%3Cp%3EOnce%20the%20dumplings%20float%20to%20the%20top,%20cover%20and%20lightly%20simmer%20for%20another%205%20minutes.%3C/p%3E%3Cp%3EScoop%20out%20the%20dumplings%20with%20a%20slotted%20spoon%20and%20add%20them%20to%20the%20soup.%20%20Let%20them%20simmer%20in%20the%20soup%20for%20a%20few%20more%20minutes%20to%20soak%20up%20the%20flavors.%20%20Add%20salt%20and%20pepper%20to%20taste.%20%20Serve%20sprinkled%20with%20a%20little%20chopped%20fresh%20parsley.%3C/p%3E%3Cp%3EEnjoy!%20%20(P.S.%20%20This%20soup%20tastes%20fabulous%20the%20next%20day%20as%20well!)%3C/p%3E%3Cp%3EGerman%20Pea%20Soup%20with%20Egg%20Dumplings%20(Erbsensuppe%20mit%20Eierschw%C3%A4mmchen)%3C/p%3E%3Cp%3ETotal%20time%3C/p%3E%3Cp%3E1%20hour%2045%20mins%3C/p%3E%3Cp%3E:%20Kimberly%20Killebrew,%20www.daringgourmet.com%3C/p%3E%3Cp%3EServes:%206-8%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EIn%20a%20large%20so
