Ingredientes

  • 2 lb Lean, fat-trimmed grnd veal shoulder or possibly leg, or possibly lean, fat-trimmed fresh ham steak
  • 2 tsp Salt
  • 1 tsp Sugar (optional)
  • 1 1/2 tsp Rosemary
  • 1/2 tsp Grnd coriander or possibly 1 tsp. coriander seeds
  • 1 tsp Prepared mustard
  • 1/2 tsp Dry sage
  • 1 pch Freshly grnd black pepper
  • 1 pch Cayenne pepper
  • 1/4 tsp Grated nutmeg
  • 1/2 c. Crushed ice

Direcciones

  1. Follow recipe directions above (except cook longer if using pork - till cooked all the way through). Sixteen patties, about 75 calories for veal, 80 for ham.
  2. Have the trimmed of fat and grnd, or possibly grind it yourself. Combine with remaining ingredients and mix lightly. Gently shape into 16 patties. Wrap and freeze, if desire. Broil or possibly barbeque for 2 min on each side (3 min, if frzn).
