%20is%20a%20French%20Breakfast%20bread%20especially%20during%20Christmas%20time.%20Infact%20it%20is%20one%20of%2013%20traditional%20French%20Christmas%20desserts%20and%20is%20served%20after%20the%20Midnight%20Mass%20to%20signify%20the%20Last%20Supper%20of%20Christ%20and%20his%2012%20apostles.%3C/p%3E%3Cp%3EThe%20buttery%20breakfast%20bread%20was%20the%20chosen%20one%20for%20this%20month%20We%20Knead%20to%20Bake%20by%20Aparna%20from%20Baking%20Artisan%20Breads%20&%20Pastries.%20It%20can%20be%20baked%20as%20a%20round%20loaf%20or%20smaller%20single%20serve%20breads%20with%20snips%20that%20give%20it%20a%20really%20festive%20look.%20Made%20of%20orange%20blossom%20water%20and%20filled%20with%20candied%20orange%20peel,%20sprinkled%20with%20snowy%20powdered%20sugar,%20definitely%20I%20felt%20festive%20while%20baking%20and%20loved%20it%20first%20bite%20onwards.As%20usual%20I%20went%20for%20half%20the%20recipe%20and%20made%20mini%20portions.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EBiga:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EMake%20the%20big%20the%20previous%20night%20by%20mixing%20all%20the%20ingredients%20together%20to%20get%20a%20slightly%20stiff%20but%20smooth%20dough.%20Add%20little%20more%20milk%20if%20too%20stiff.%3C/p%3E%3Cp%3ETransfer%20to%20an%20oiled%20bowl%20and%20cover%20with%20a%20plastic%20wrap%20loosely.%20Let%20it%20stand%20overnight%20at%20room%20temperature%20for%20about%2014-16%20hours.%20By%20this%20time%20it%20would%20have%20risen%20and%20have%20a%20fermented%20look.%3C/p%3E%3Cp%3EBread%20Dough:%3C/p%3E%3Cp%3EPut%20the%20egg(Ener%20G),%20olive%20oil%20and%20orange%20blossom%20water%20in%20a%20processor%20bowl%20and%20run%20few%20time%20to%20mix%20well.%20Add%20warm%20water%20and%20mix.%20Mix%20all%20the%20liquids%20together%20with%20Ener%20G%20Egg%20and%20olive%20oil%20and%20run%20a%20couple%20of%20times.%3C/p%3E%3Cp%3EAdd%20the%20chopped%20up%20biga%20pieces,%20flour,yeast,%20sugar%20and%20salt%20and%20blend%20together%20to%20get%20a%20smooth%20dough.%3C/p%3E%3Cp%3EAdd%20the%20chunks%20of%20butter%20-%20just%20soft%20and%20not%20too%20soft-%20to%20this%20and%20knead%20till%20the%20butter%20is%20incorporated%20before%20adding%20the%20next%20chunk.%20knead%20well%20until%20the%20dough%20is%20soft%20and%20supple.%3C/p%3E%3Cp%3EAdd%20the%20candied%20peel,%20zest%20and%20anise%20seeds%20and%20knead%20till%20incorporated.%20Shape%20into%20a%20round%20and%20place%20in%20a%20well%20oiled%20bowl%20turning%20to%20coat%20well.%20Cover%20loosely%20and%20let%20it%20sit%20until%20doubled%20up%20for%20about%202%20hours.%3C/p%3E%3Cp%3EWhen%20done,%20turn%20the%20dough%20into%20smaller%20equal%20sized%20portions,%20shape%20into%20round%20portions%20and%20let%20it%20rest%20for%20another%2015-20%20minutes.%3C/p%3E%3Cp%3EThen%20take%20each%20portion%20and%20roll%20it%20into%20a%20oval%20or%20semicrircle.%20I%20went%20for%20oval%20(or%20looking%20similar%20:)%20)%20and%20then%20halved%20it%20so%20as%20to%20get%20two%20semicircles.%20Take%20each%20semicircle%20and%20make%20three%20cuts,%20one%20in%20the%20centre%20and%20two%20at%20equal%20distances%20from%20the%20centre%20one%20on%20either%20side%20by%20pushing%20the%20scissors%20straight%20into%20the%20dough.%20Then%20using%20scissors,%20make%204%20snips%20at%20equal%20distances%20along%20the%20arch.%3C/p%3E%3Cp%3ELift%20the%20piece,%20stretching%20it%20a%20little%20so%20that%20the%20slits%20spread%20and%20open%20and%20place%20it%20in%20a%20lined%20baking%20sheet%20.%20Repeat%20with%20remaining%20portions%20of%20the%20dough%20and%20let%20the%20gibassiers%20rise%20until%20puffy%20for%20about%2030-45%20minutes.%3C/p%3E%3Cp%3EBake%20in%20a%20preheated%20oven%20at%20180%20C%20for%20about%2015-18%20minutes%20until%20golden%20brown%20on%20top.%3C/p%3E%3Cp%3ETake%20out%20and%20while%20still%20hot,%20brush%20it%20with%20melted/clarified%20butter(ghee)%20and%20immediately%20sprinkle%20powdered%20sugar%20atop.%3C/p%3E%3Cp%3EServe%20as%20a%20breakfast%20pastry%20or%20anytime%20snack.%20Perfect%20with%20tea%20and%20definitely%20give%20a%20festive%20feel.Never%20before%20I%20have%20felt%20so%20festive%20or%20Christmassy%20while%20sprinkling%20the%20powdered%20sugar%20over%20the%20bread.%3C/p%3E%3Cp%3ELets%20hope%20all%20thos%20who%20baked%20felt%20the%20same.Peep%20in%20over%20at%20Aparna's%3C/p%3E){kind=link}
