- Chop ginger.
- Sift flour and sugar into a bowl, fold in ginger, butter, egg and lemon juice. Press mix proportionately over base of well greased 16cm X 26cm lamington tin, press almonds on top.
- Bake in moderate oven for about 40 min or possibly till golden. Allow to cold in tin and cut into bars when cool.
- Serve with afternoon tea.
