Gingerbread with Brown Sugar Topping

This is a recipe I adapted to our love of ginger!

Ingredientes

  • 1/2 cup Shortening
  • 1/2 cupsugar
  • 1 large egg
  • 1/2 cup dark molasses
  • 1 1/2 cups flour
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 1/2 rounded tsp ginger
  • 1/2 rounded tsp cinnamon
  • 1/2 cup water, boiling hot
  • 1/4 cup diced chinese sugared ginger
  • Topping:
  • 1/4 cup brown sugar
  • 2 tbs flour
  • 2 tbs butter
  • 1 tsp cinnamon
  • 2 tsp minced chinese sugared ginger
  • dash of salt

Direcciones

  1. Preheat oven to 350 degrees, F. and butter an 8" or 9" round cake pan.
  2. Blend the sugar and shortening, creaming it until light and fluffy.
  3. Add the egg and molasses; beat thoroughly.
  4. Sift the dry ingredients (or mix them with a whisk to lighten the flour)
  5. Alternately add the molasses mixture alternately with the boiling water, beating after each addition.
  6. Bake about 18 - 20 minutes.
  7. In the meantime, blend the topping ingredients and set aside.
  8. remove from oven and sprinkle the topping over the top and return to oven an additional 10 minutes, or until cake tester comes out of the gingerbread cleanly.
  9. Serve with whipped cream or ice cream.
