Glazed Carrots With Bacon

Ingredientes

  • 12 slices bacon, diced
  • 2 tbsp. butter
  • 1 lg. onion, minced fine
  • 3 tbsp. sugar
  • 2 lbs. carrots, cleaned and cut into 1 inch thick pcs
  • 2 teaspoon dry thyme
  • 1 c. good chicken broth
  • Salt and pepper to taste

Direcciones

  1. Heat butter in large skillet. Add in bacon and brown till nice and crisp. Remove bacon and drain on paper towel. Add in onions to pan and saute/fry till lightly browned. Stir in sugar and saute/fry till onions are caramelized. Add in reserved bacon and next 3 ingredients. Bring to a boil, covered, and simmer till carrots are tender, about 30-40 min. Remove, cover, and cook over medium, heat till liquid is reduced to a thin glaze, about 5 min. Season with salt and pepper to taste.
