Glazed Salmon With Stir Fried Vegetables

Ingredientes

  • 2 x carrots
  • 1 x parsnip
  • 1 sm red bell pepper
  • 8 x green onions
  • 4 x skinless salmon fillets - (4 ounce ea)
  • 1/4 tsp salt Vegetable cooking spray as needed
  • 1/4 c. apple jelly
  • 3 Tbsp. rice wine vinegar
  • 2 Tbsp. water
  • 1 Tbsp. lite soy sauce
  • 1 tsp cornstarch
  • 1/2 tsp to 1 minced fresh dill (optional)
  • 2 tsp vegetable oil Fresh dill sprigs for garnish

Direcciones

  1. Cut first 4 ingredients into thin strips, and set aside.
  2. Sprinkle salmon fillets proportionately with salt. Place on a rack in a broiler pan coated with cooking spray. Broil 6 inches from heat 10 to 13 min or possibly till fish flakes with a fork.
  3. Whisk together jelly, next 4 ingredients, and, if you like, dill.
  4. Cook carrot and parsnip in warm oil in a large skillet over medium-high heat, stirring often, 2 to 3 min. Add in bell pepper and onions; cook 1 to 2 min or possibly till crisp-tender. Remove vegetables from skillet, and keep hot.
  5. Add in jelly mix to skillet, and cook, stirring constantly, 3 to 4 min or possibly till thickened.
  6. Spoon vegetables proportionately onto serving plates. Drizzle with half of sauce. Top with salmon fillets, and drizzle with remaining sauce. Garnish, if you like.
  7. This recipe yields 4 servings.
