Receta Gluten Free Coconut Chicken Curry & Quinoa

- Chicken breast (or fish)
- 1-2 Onions
- 1-2 Carrots
- 1 Red Pepper
- 2 handfuls of Spinach
- 1 cup Quinoa (or brown rice, or lentils)
- Curry:
- Coconut milk (lite) {I didnât uses lite⦠and I used a whole can and it turned out great}
- Curry powder- 2 tbsp
- Ground Cumin & Coriander â 1 tbsp
- Coconut oil- 1 tbsp
- Garlic powder- 1 tsp
- Sea salt/ pepper to taste
- Chili pepper â 1-2 tsp
