%20days%20and%20we%20are%20apparently%20heading%20right%20back%20into%20summer.%20I%E2%80%99m%20not%20a%20fan.%20The%20only%20plus%20side%20is%20that%20I%20now%20have%20a%20legitimate%20reason%20to%20insist%20on%20barbecuing%20as%20often%20as%20possible.%20I%20was%20all%20set%20to%20grill%20up%20a%20delicious%20meal%20the%20other%20day%20and%20it%20turned%20out%20we%20had%20no%20propane%20left,%20which%20is%20kind%20of%20a%20major%20component%20to%20using%20a%20gas%20grill.%20Memo%20to%20Self:%20always%20check%20for%20propane.%3C/p%3E%3Cp%3EThe%20meal%20was%20not%20a%20total%20loss%20because%20I%20had%20made%20some%20delicious%20side%20dishes%20to%20go%20with%20the%20barbecue.%20This%20salad%20is%20probably%20going%20to%20be%20in%20regular%20rotation%20over%20the%20next%20few%20months%20around%20here.%20It%E2%80%99s%20a%20very%20easy%20to%20make%20and%20very%20delicious.%20I%20originally%20used%20white%20balsamic%20vinegar%20in%20my%20dressing%20for%20this%20salad,%20but%20I%20honestly%20thought%20it%20turned%20out%20a%20bit%20too%20sweet.%20I%20think%20apple%20cider%20vinegar%20or%20white%20wine%20vinegar%20would%20be%20a%20much%20better%20match.%20I%20used%20dill%20in%20the%20potato%20salad%20because%20it%20had%20a%20ton%20on%20hand,%20but%20you%20could%20use%20just%20about%20fresh%20herbs%20you%20have%20on%20hand.%20Parsley%20or%20basil%20would%20be%20great%20and%20I%20think%20arugula%20really%20would%20be%20great%20too.%3C/p%3E%3Cp%3EGluten%20Free%20Greek%20Yogurt%20&%20Herb%20Potato%20Salad%3C/p%3E%3Cp%3EBring%20water%20to%20a%20boil%20in%20a%20large%20pot%20fitted%20with%20a%20steamer%20basket.%20Add%20potatoes,%20cover%20and%20cook%20until%20tender,%2012%20to%2015%20minutes.%20Drain%20and%20when%20potatoes%20have%20cool%20enough%20to%20touch,%20cut%20into%20quarters%20and%20halves%20(depending%20on%20size).%20Let%20cut%20potatoes%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3ECombine%20yogurt,%20scallions,%20dill,%20vinegar,%20lemon%20juice,%20salt%20and%20pepper%20in%20a%20large%20bowl.%20Add%20the%20cooled%20potatoes%20and%20toss%20to%20coat.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
