Receta Gluten Free Millet Pancakes

Millet is the grain of choice in this pancake recipe. Why? It is high in protein and gluten free.
Millet is considered a whole-grain food which protects against cardiovascular disease and diabetes as well as certain types of cancer. Another health benefit of millet consumption is a decrease in the incidence of stomach ulcers. Whole grains, such as millet, may also provide protection against childhood asthma. Source
The following recipe makes 8 pancakes. *Make sure to keep them small because these are a bit heavier than regular flour based breakfast pancakes (but still as good!).
Ingredientes
- â 2 cups millet flour
- â 4 TBS sugar
- â 2 tsp. baking powder
- â 1/2 tsp. salt
- â 1 over ripe banana (or use 1/2 can, about 7 1/2 oz., 100% pumpkin)
- â 1/2 tsp. cinnamon
- â 1/4 tsp. ginger
- â pinch of nutmeg
- â 6 TBS canola oil
- â 1 cup water
Direcciones
- Combine the dry ingredients from flour to salt.
- Stir in the spices (cinnamon, ginger, nutmeg).
- Add the banana, oil and water and mix to combine.
- Pour about 1/4 cup at a time onto a hot skillet sprayed with non stick or rubbed with vegetable oil.
- Cook for 3 â 4 minutes or until bottom side is done then flip and cook another 2 â 3 minutes until done.
- Serve with maple syrup and enjoy.
- *They will freeze if you wrap up well.
