,%20but%20there%20are%20all%20sorts%20of%20other%20culinary%20delights%20that%20are%20famous%20in%20Omaha.%20Yesterday%20I%20shared%20a%20gluten-free%20Reuben%20salad,%20which%20was%20my%20take%20on%20the%20famous%20Reuben%20sandwich%20that%20originated%20in%20Omaha.%20Today%20I%20made%20something%20that%20I%20had%20never%20heard%20of%20before!%20A%20runza!%3C/p%3E%3Cp%3EA%20runza,%20which%20is%20sometimes%20called%20a%20bierock,%20came%20to%20the%20Midwest%20with%20the%20German,%20Russian%20and%20Eastern%20European%20immigrants%20that%20settled%20there.%20I%20was%20actually%20surprised%20by%20how%20much%20I%20enjoyed%20the%20runzas%20I%20made.%20They%20were%20delicious.%20I%20am%20partial%20to%20Eastern%20European%20food,%20so%20cabbage,%20onion%20and%20meat%20can%E2%80%99t%20really%20be%20bad%20in%20my%20book.%20With%20the%20addition%20of%20some%20spices%20and%20extra-lean%20ground%20turkey%20(they%20are%20traditionally%20made%20with%20ground%20beef%20or%20pork,%20but%20that%E2%80%99s%20not%20my%20style)%20to%20light%20it%20up%20a%20little,%20the%20end%20result%20was%20a%20perfect%20hand%20held%20sandwich.%20If%20I%20was%20the%20make%20runzas%20again%20(which%20I%20just%20might,%20because%20I%20think%20they%20would%20freeze%20and%20keep%20really%20well)%20I%20would%20probably%20add%20some%20grainy%20dijon%20to%20the%20cabbage%20mix.%20The%20flavor%20was%20good,%20but%20I%20think%20mustard%20would%20make%20it%20perfect.%20I%20was%20a%20bit%20short%20on%20time%20this%20week,%20so%20I%20cheated%20and%20rolled%20out%20some%20Chebe%20dough%20for%20my%20crust,%20which%20worked%20perfectly.%20I%20was%20able%20to%20get%208%20big%20runza%20out%20of%20one%20bread%20mix.%20I%20ended%20up%20with%20a%20lot%20of%20left%20over%20cabbage%20and%20meat,%20so%20next%20time%20I%20might%20try%20to%20make%20mini%20ones%20instead.%3C/p%3E%3Cp%3EGluten%20Free%20Runza%20(or%20Bierock)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20Filling:%3C/p%3E%3Cp%3E1/2%20small%20head%20of%20cabbage%20shredded%20(or%20a%20bag%20of%20cole%20slaw%20mix)%3C/p%3E%3Cp%3EFor%20the%20dough:%3C/p%3E%3Cp%3E1%20box%20of%20Chebe%20bread%20mix,%20or%20dough%20recipe%20of%20choice%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFor%20the%20Filling:%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20large%20pan.%20When%20heated%20add%20onion%20and%20cook%20until%20well%20browned%20and%20starting%20to%20caramelize.%20Add%20turkey%20and%20break%20apart%20to%20cook.%20Add%20spices%20and%20brown%20the%20meat.%3C/p%3E%3Cp%3EAdd%20the%20cabbage%20and%20cover%20pan%20with%20lid%20slightly%20off%20to%20allow%20steam%20to%20escape.%20Remove%20lid%20when%20cabbage%20is%20almost%20completely%20cooked%20and%20allow%20excess%20moisture%20to%20evaporate.%3C/p%3E%3Cp%3EWhen%20cabbage%20and%20meat%20are%20both%20cooked%20through,%20remove%20pan%20from%20heat%20and%20allow%20filling%20to%20cool%20slightly.%3C/p%3E%3Cp%3EFor%20the%20Dough:%3C/p%3E%3Cp%3EFollow%20instructions%20on%20box%20and%20when%20dough%20is%20mixed,%20roll%20out%20on%20flat,%20well%20floured%20surface.%3C/p%3E%3Cp%3ECut%20the%20dough%20in%20to%208%20pieces%20that%20you%20will%20be%20able%20to%20fold%20it%20into%20a%20rectangle.%3C/p%3E%3Cp%3EPlace%20filling%20in%20center%20of%20each%20piece%20and%20fold%20together%20into%20a%20rectangle%3C/p%3E%3Cp%3EFor%20the%20Runzas:%3C/p%3E%3Cp%3EHeat%20oven%20to%20375.%20Place%20folded%20runzas%20on%20a%20parchment%20lined%20baking%20sheet%20and%20bake%20for%2020-25%20minutes.%3C/p%3E%3Cp%3EServe%20and%20enjoy!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
