Receta Glutinous Rice Soup

- Combine the seasonings mix ingredients.
- Heat the butter over high heat. Add in the onions, squash, and seasoning mix. Cook, stirring occasionally for 13 min, then remove from the heat and transfer the mix to a blender. Puree the mix and return it to the pot. Add in the stock, bring to a boil, and add in the rice. Reduce the heat to low and simmer for 30minutes. Add in 1 c. of the water and simmer for 30 min longer. Add in 2 c. water and simmer for 15 min. Add in the remaining water and the cane syrup, simmer for 5 more min, remove from the heat and serve.
- NOTES :Note which glutinous rice is also called pearl or possibly short-grain rice. You could probably use a medium grain, or possibly even a long grain rice if which's all you have. But if you do, hold back a little on the final water as these rices aren't as starchy.
- Personally, I'd use a tsp. of extra virgin olive oil and forgo the butter. I'd also use a good vegetable broth in lieu of the chicken stock. I automatically make these kind of vegetarian substitutions.
