,%20I%20had%20never%20even%20made%20a%20tart%20crust%20before.%20There%20are%20plenty%20of%20things%20I%20can%20expertly%20bake.%20But%20those%20skills%20I%20haven%E2%80%99t%20developed%E2%80%A6I%20stay%20clear%20of.%3C/p%3E%3Cp%3EI%20tweaked%20the%20ratios%20for%20the%20cake,%20crust%20and%20cream,%20varying%20each%20to%20what%20I%20thought%20would%20work%20with%20my%209-inch%20spring%20pan.%20The%20cheesecake%20turned%20out%20divine.%20It%20was%20rich,%20perfectly%20cooked%20and%20separated%20from%20its%20pan%20like%20a%20champ.%20The%20goat%20cheese%20added%20just%20a%20hint%20of%20tanginess%20and%20the%20lemon%20cream%20a%20bite%20of%20tart.%20The%20crust,%20on%20the%20other%20hand,%20had%20some%20challenges.%20I%20blame%20my%20less-than-flat%20beveled%20spring%20pan%20for%20this.%20It%20did%20its%20best%20to%20cling%20to%20the%20cake,%20but%20serving%20a%20perfect%20slice%20without%20a%20bit%20of%20crumble%20on%20each%20side%20proved%20to%20be%20impossible.%20Perhaps%20a%20flat-bottom%20pan%20or%20even%20some%20parchment%20paper%20would%20have%20helped?%20I%E2%80%99m%20open%20to%20suggestions!%20But%20even%20still,%20crumble%20and%20all,%20it%20was%20a%20damn%20fine%20first%20real%20cheesecake.%3C/p%3E%3Cp%3EGoat%20Cheese%20Pistachio%20Cheesecake%20with%20Meyer%20Lemon%20Cream%20(adapted%20from%20the%20Kitchn)%3C/p%3E%3Cp%3EFor%20the%20pistachio%20crust:%3C/p%3E%3Cp%3EFor%20the%20pistachio%20crust,%20combine%20pistachios,%20sugar%20and%20salt%20in%20food%20processor%20or%20mini%20chopper%20and%20process%20until%20it%20becomes%20a%20fine%20meal.%20Transfer%20the%20mixture%20to%20a%20bowl%20and%20stir%20in%20the%20melted%20butter;%20the%20mixture%20should%20resemble%20wet%20sand.%20Generously%20butter%20and%20flour%20a%209-inch%20spring%20pan.%20Press%20the%20pistachio%20crumbs%20into%20the%20bottom%20of%20spring%20pan%20and%20about%201-inch%20up%20the%20side.%20You%20want%20it%20to%20be%20about%201/4-inch%20thick.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%C2%B0F.%20While%20the%20oven%20is%20heating,%20refrigerate%20the%20crust%20until%20chilled.%20Bake%20the%20crusts%20for%2012%20to%2015%20minutes%20until%20set.%20Cool%20completely%20before%20filling.%3C/p%3E%3Cp%3EFor%20the%20filling,%20lower%20oven%20temperature%20to%20300%C2%B0F.%20Combine%20the%20goat%20cheese%20and%20sugar%20in%20the%20bowl%20of%20a%20stand%20mixer%20and%20whip%20until%20creamy.%20Add%20the%20cr%C3%A8me%20fra%C3%AEche,%20honey,%20vanilla,%20and%20salt%20and%20continue%20mixing%20until%20smooth.%20Add%20the%20eggs,%20one%20at%20a%20time,%20mixing%20until%20just%20combined.%20Make%20sure%20to%20scrape%20down%20the%20sides%20and%20bottom%20as%20necessary.%3C/p%3E%3Cp%3EPour%20mixture%20into%20the%20prepared%20spring%20pan.%20Place%20the%20spring%20pan%20on%20top%20of%20a%20rimmed%20baking%20sheet%20and%20bake%2055-65%20minutes,%20until%20the%20edge%20of%20the%20cake%20is%20golden%20and%20the%20center%20is%20just%20barely%20set.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20to%20room%20temperature.%20Transfer%20the%20pan%20to%20the%20refrigerator%20and%20chill%20for%20a%20minimum%20of%204%20hours.%3C/p%3E%3Cp%3EFor%20the%20Meyer%20lemon%20cream,%20cream%20the%20butter%20and%20sugar%20with%20an%20electric%20mixer%20in%20a%20medium%20mixing%20bowl%20until%20light%20and%20fluffy,%20about%202%20minutes.%20Slowly%20add%20the%20eggs%20and%20yolks%20and%20beat%20for%201%20minute,%20until%20well%20combined.%20Add%20the%20lemon%20zest,%20lemon%20juice,%20vanilla,%20and%20salt%20and%20continue%20mixing%20until%20incorporated.%20(The%20mixture%20will%20become%20curdled%20and%20lumpy%20upon%20adding%20the%20lemon%20juice,%20but%20it%20will%20smooth%20quickly%20upon%20heating.)%3C/p%3E%3Cp%3ETransfer%20the%20mixture%20to%20a%20medium%20saucepan%20and%20cook%20over%20medium-low%20heat,%20whisking%20constantly,%20until%20the%20mixture%20reaches%20165%C2%B0F%20on%20an%20instant%20read%20thermometer;%20the%20mixture%20should%20be%20just%20thick%20enough%20to%20coat%20the%20back%20of%20the%20spoon.%20Transfer%20to%20another%20bowl%20and%20press%20plastic%20directly%20on%20the%20surface.%20Let%20cool%20at%20room%20temperature%20until%20ready%20to%20serve.%3C/p%3E%3Cp%3EFor%20the%20candied%20pistachios,%20toss%20pistachios%20with%20salt%20and%20sugar%20in%20a%20medium%20bowl.%20Add%20water%20and%20stir%20with%20a%20rubber%20spatula%20until%20nuts%20are%20evenly%20wet.%20Spread%20nut%20mixture%20onto%20a%20parchment%20lined%20baking%20sheet%20and%20bake%20in%20a%20350%C2%B0F%20oven%20until%20golden%20and%20toasted,%208%20to%2010%20minutes.%20Once%20cool,%20crumble%20the%20pistachios%20for%20serving.%3C/p%3E%3Cp%3ETo%20assemble,%20slice%20cheesecake%20and%20divide%20among%20individual%20dishes.%20Drizzle%20each%20slice%20with%20Meyer%20lemon%20cream%20and%20sprinkle%20with%20candied%20pistachios.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
