%20%E2%80%94%20it%20felt%20like%20a%20crime%20to%20actually%20pull%20persimmons%20off%20of%20them.%20But%20pull%20persimmons%20off%20of%20them,%20I%20did,%20and%20when%20I%20got%20home%20with%20them,%20they%20were%20so%20very%20squishy,%20they%20almost%20seemed%20rotten.%20But%20I%20knew%20better.%3C/p%3E%3Cp%3EJust%20by%20itself,%20the%20jelly-like%20persimmon%20flesh%20tastes%20sweet%20and%20delicious.%20But%20I%E2%80%99d%20long%20been%20curious%20about%20James%20Beard%E2%80%99s%20Persimmon%20Bread,%20which%20David%20Lebovitz%20adapted%20on%20his%20blog.%3C/p%3E%3Cp%3EJames%20Beard,%20the%20grandfather%20of%20American%20gastronomy,%20has%20been%20on%20my%20mind%20lately%20because%20my%20friend%20John%20Birdsall%20has%20a%20new%20biography%20of%20him%20called%20The%20Man%20Who%20Ate%20Too%20Much.%20That%20book%E2%80%99s%20going%20on%20my%20Christmanukkah%20list%20and%20it%E2%80%99s%20already%20scoring%20rave%20reviews.%3C/p%3E%3Cp%3EAs%20for%20the%20bread,%20it%E2%80%99s%20as%20simple%20as%20whirring%20up%20the%20persimmon%20flesh%20(is%20it%20creepy%20that%20I%20call%20it%20%E2%80%9Cflesh%E2%80%9D?)%20in%20the%20food%20processor,%20then%20mixing%20it%20along%20with%20eggs%20and%20melted%20butter%20in%20with%20flour,%20sugar,%20all%20the%20usual%20stuff.%20Plus%20some%20freshly%20grated%20nutmeg.%3C/p%3E%3Cp%3EThe%20secret%20ingredient%20here%20is%20booze.%20David%20calls%20for%20Cognac%20or%20Bourbon%20whiskey,%20but%20I%20had%20some%20Brandy%20and%20figured%20%E2%80%9Cwhy%20not?%E2%80%9D%3C/p%3E%3Cp%3EHe%20also%20calls%20for%20walnuts%20or%20pecans,%20but%20I%20only%20had%20slivered%20almonds.%20So%20I%20toasted%20those,%20chopped%20them,%20and%20added%20them%20along%20with%20the%20raisins.%3C/p%3E%3Cp%3EThe%20only%20tricky%20thing%20here%20is%20the%20baking%20time.%20I%20cooked%20the%20bread%20for%20an%20hour,%20as%20instructed,%20but%20it%20was%20still%20very%20wet%20when%20I%20tested%20the%20middle.%20So%20I%20kept%20going%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6and%20the%20resulting%20bread%20came%20out%20a%20little%20dry%20on%20the%20ends,%20but%20wonderfully%20moist%20in%20the%20center.%3C/p%3E%3Cp%3EIf%20I%20had%20to%20do%20it%20all%20over%20again,%20I%E2%80%99d%20take%20it%20out%20while%20still%20a%20little%20wet%20in%20the%20middle%20and%20let%20the%20residual%20heat%20cook%20it.%3C/p%3E%3Cp%3EAll-in-all,%20though,%20this%20is%20a%20perfect%20way%20to%20use%20up%20squishy%20persimmons.%20Think%20banana%20bread,%20but%20more%20tropical%20and%20Christmasy%20with%20the%20nutmeg%20and%20the%20booze.%20Can%E2%80%99t%20wait%20to%20eat%20a%20piece%20while%20drinking%20tea%20and%20reading%20John%20Birdsall%E2%80%99s%20book%20which%20my%20husband%20is%20going%20to%20get%20for%20me%20because%20I%E2%80%99m%20sure%20he%E2%80%99s%20reading%20this%20post%20in%20its%20entirety.%20RIGHT,%20CRAIG?%3C/p%3E%3Cp%3EJames%20Beard%E2%80%99s%20Persimmon%20Bread%3C/p%3E%3Cp%3EA%20recipe%20for%20one%20loaf,%20adapted%20from%20David%20Lebovitz's%20recipe.%3C/p%3E%3Cp%3EHeat%20the%20oven%20to%20350%20and%20generously%20coat%20your%20loaf%20pan%20with%20softened%20butter%20(about%20a%20tablespoon).%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20flour,%20salt,%20baking%20soda,%20nutmeg,%20and%20sugar.%20Create%20a%20well%20in%20the%20center%20and%20add%20the%20eggs,%20booze,%20persimmon%20puree%20and%20whisk%20together%20until%20just%20combined.%20With%20a%20rubber%20spatula,%20fold%20in%20the%20nuts%20and%20fruit.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepped%20pan%20and%20bake%20for%20one%20hour,%20or%20until%20a%20cake%20tester%20comes%20out%20clean.%20(Based%20on%20my%20experience,%20it's%20better%20to%20under-bake%20a%20little%20than%20to%20over-bake.)%20Let%20cool%20before%20slicing%20and%20serving.%3C/p%3E%3Cp%3EHow%20to%20Add%20Flair%20To%20Your%20Banana%20Bread%3C/p%3E%3Cp%3EPersimmon%20Cranberry%20Sauce%3C/p%3E%3Cp%3EPersimmon%20Rum%20Bundt%20Cake%20(The%20Little%20Epicurean)%3C/p%3E%3Cp%3EPersimmon%20Spice%20Bread%20(Martha%20Rose%20Shulman,%20NYT)%3C/p%3E%3Cp%3EPersimmon%20Bread%20(Proportional%20Plate)%3C/p%3E){kind=link}
