.%20My%20solution%20to%20not%20getting%20pinched%20by%20crabs%20is%20to%20wear%20old%20tennis%20shoes%20while%20crabbing.%20Do%20they%20look%20good%20with%20a%20bathing%20suit?%20No.%20But%20my%20toes%20don't%20get%20pinched%20and%20that's%20more%20important%20than%20fashion.%3C/p%3E%3Cp%3ESo%20back%20to%20my%20vacation%20bonus...the%20coveted%20crabmeat.%20Crab%20is%20expensive,%20so%20I%20was%20thrilled%20to%20have%20extra%20to%20take%20home.%20As%20we%20were%20crabbing,%20I%20was%20already%20laying%20down%20plans%20for%20what%20I'd%20do%20with%20them.%20Those%20crabs%20never%20stood%20a%20chance%20with%20me%20watching%20the%20lines%20and%20scheming,%20rubbing%20my%20hands%20together,%20laughing%20an%20evil%20laugh,%20salivating.%3C/p%3E%3Cp%3ECrab%20Au%20Gratin%20was%20a%20given.%20But%20I%20knew%20I%20had%20enough%20crabs%20for%20another%20dish%20too.%20So%20I%20thought%20I'd%20make%20my%20brother%20D's%20Crab%20&%20Artichoke%20Lafourche.%20That%20would%20be%20perfect.%20We%20had%20to%20drive%20through%20Lafourche%20parish%20and%20along%20Bayou%20Lafourche%20to%20get%20to%20Grand%20Isle%20after%20all.%20Yeah!%20It%20was%20perfect.%20It%20was%20like%20fate%20or%20something.%20Yeah.%20Something.%20Then%20I%20got%20home%20and%20realized%20his%20recipe%20was%20Shrimp%20&%20Artichoke%20Lafourche.%20Well,%20I'd%20gotten%20myself%20too%20jazzed%20up%20about%20the%20whole%20fate%20thing,%20so%20I%20went%20with%20it%20anyway.%3C/p%3E%3Cp%3ESince%20crab%20is%20more%20delicate%20than%20shrimp%20and%20the%20recipe%20called%20for%20raw%20shrimp%20and%20my%20crab%20was%20already%20cooked,%20I%20had%20to%20make%20some%20changes.%20It%20came%20out%20okay.%20Not%20the%20best%20crab%20dish%20I'd%20ever%20eaten...that%20would%20be%20Crab%20Au%20Gratin%20which%20I'll%20save%20for%20next%20week.%20(Just%20a%20little%20tease.%20Gotta%20keep%20ya%20comin'%20back).%20But%20it%20was%20still%20good.%20Tasted%20like%20stuffed%20artichoke%20with%20crab%20added%20in.%20Can't%20complain%20about%20that.%20I'll%20have%20to%20make%20it%20one%20day%20as%20it%20was%20intended,%20with%20shrimp.%20I%20ended%20up%20adding%20too%20much%20breadcrumbs%20(as%20usual),%20so%20I've%20reduced%20the%20amount%20in%20the%20recipe.%3C/p%3E%3Cp%3ECrab%20and%20Artichoke%20Lafourche%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace,%20adapted%20from%20my%20brother%20D's%20recipe%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%3C/p%3E%3Cp%3ESaut%C3%A9%20onion%20and%20garlic%20in%20olive%20oil%20until%20tender.%20Add%20cheeses,%20bread%20crumbs,%20and%20cream%20of%20mushroom%20soup%20and%20season%20to%20taste.%20Combine%20well.%20Add%20artichokes,%20crab,%20green%20onion.%20Fold%20gently%20to%20combine.%3C/p%3E%3Cp%3EPour%20into%20a%20greased%202%20qt%20casserole%20dish.%20Top%20with%20additional%20bread%20crumbs%20and%20Parmesan%20cheese.%20Drizzle%20olive%20oil%20or%20melted%20butter%20over%20the%20top.%20Bake%20at%20350%20for%2030%20minutes.%3C/p%3E%3Cp%3EThis%20is%20an%20example%20of%20a%20typical%20seafood%20casserole%20that%20you'd%20find%20in%20S%20LA.%20Vegetable%20casseroles%20too.%20Artichokes%20are%20actually%20a%20common%20ingredient%20in%20and%20around%20New%20Orleans.%20Stuffed%20artichokes%20are%20extremely%20popular.%20My%20dad%20has%20even%20thrown%20artichokes%20into%20the%20crawfish%20boil.%20We%20joke%20that%20if%20you%20stand%20in%20one%20place%20too%20long,%20he'll%20throw%20you%20in%20too.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Crab%20&%20Artichoke%20Lafourche.%20Not%20pictured%20are%20seasonings%20you%20could%20use%20to%20make%20it%20your%20own.%20I%20added%201/4%20tsp%20black%20pepper,%20a%20pinch%20of%20cayenne,%20and%20a%20few%20squirts%20of%20lemon%20juice.%3C/p%3E%3Cp%3ESaute%20the%20onions%20and%20garlic%20in%20olive%20oil.%20Since%20I%20don't%20want%20them%20cooked%20down%20to%20nothing,%20I%20like%20to%20wait%20on%20the%20green%20onions...what%20we%20call%20shallots%20(I%20know,%20I%20know.%20It's%20confusing%20and%20wrong).%3C/p%3E%3Cp%3EWhen%20the%20onions%20are%20soft,%20add%20the%20cream%20of%20mushroom%20soup.%20Cream%20of%20mushroom%20soup%20really%20isn't%20an%20attractive%20food,%20is%20it?%20Add%20both%20cheeses%20and%20the%20breadcrumbs.%20Season%20however%20you'd%20like%20and%20combine%20well.%20Then%20add%20in%20the%20green%20onion,%20cooked%20crab,%20and%20artichokes.%20Fold%20gently%20so%20you%20don't%20break%20everything%20up%20into%20baby%20food.%20What%20a%20lucky%20baby%20that%20would%20be.%20Probably%20a%20gassy%20one%20too.%3C/p%3E%3Cp%3EEmpty%20everything%20into%20a%20greased%20casserole%20dish.%20Sprinkle%20a%20light%20layer%20of%20bread%20crumbs%20and%20Parmesan%20cheese.%20Lightly%20drizzle%20with%20olive%20oil%20or%20melted%20butter.%20Bake%20at%20350%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EAnd%20get%20after%20it.%3C/p%3E%3Cp%3ETastes%20like%20Grand%20Isle.%20Oh,%20wait.%20That's%20just%20more%20sand%20I've%20found.%3C/p%3E){kind=link}
