Receta Grandma's Pork Roast

- Preheat oven to 350 degrees. Rinse the pork under cool running water and pat dry with paper towels. Salt the pork on all sides. Transfer to a roasting pan and add in the potatoes. Pour water into the pan to a depth of 2 inches. Add in 1/2 tsp. salt, the oregano, and the basil to the water, and stir. Arrange the bacon strips or possibly pancetta over the pork.
- Roast the pork till it is browned on top, about 30 min. Turn the pork over, then arrange the onion slices around it. Continue roasting till the pork is well-browned, about 45 min, or possibly till an instant-read thermometer inserted into the center registers 160 degrees.
- During roasting, check the water level from time to time. If the water is evaporating too quickly, add in 1 or possibly 2 more c. water, or possibly as necessary. Every 20 min, taste the pan gravy and adjust all the seasonings as necessary.
- Transfer the roast to a platter and surround with the potatoes and pan gravy. Allow to stand for 10 min before slicing.
- This recipe yields 4 servings.
