Ingredientes

  • 1 x center-cut boneless pork loin - (2 1/2 lbs) Salt as needed
  • 6 med -small new potatoes peeled, halved
  • 1 tsp dry oregano sticks removed, crushed till powdery
  • 6 x fresh basil leaves
  • 6 x bacon slices or possibly 3 pancetta slices cut into strips
  • 1 x yellow onion sliced medium-thin

Direcciones

  1. Preheat oven to 350 degrees. Rinse the pork under cool running water and pat dry with paper towels. Salt the pork on all sides. Transfer to a roasting pan and add in the potatoes. Pour water into the pan to a depth of 2 inches. Add in 1/2 tsp. salt, the oregano, and the basil to the water, and stir. Arrange the bacon strips or possibly pancetta over the pork.
  2. Roast the pork till it is browned on top, about 30 min. Turn the pork over, then arrange the onion slices around it. Continue roasting till the pork is well-browned, about 45 min, or possibly till an instant-read thermometer inserted into the center registers 160 degrees.
  3. During roasting, check the water level from time to time. If the water is evaporating too quickly, add in 1 or possibly 2 more c. water, or possibly as necessary. Every 20 min, taste the pan gravy and adjust all the seasonings as necessary.
  4. Transfer the roast to a platter and surround with the potatoes and pan gravy. Allow to stand for 10 min before slicing.
  5. This recipe yields 4 servings.
