Grandma Say's Blueberry Coffee Cake

Ingredientes

  • 1 1/2 c. Blueberries, rinsed
  • 1/4 c. Water
  • 2 Tbsp. Cornstarch
  • 1 1/4 c. Sugar
  • 4 Tbsp. Butter, cool
  • 1 1/2 c. Flour
  • 1/2 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Vanilla extract
  • 1 c. Buttermilk
  • 1 lrg Egg
  • 2 Tbsp. Butter, cool

Direcciones

  1. Preheat oven to 350 .
  2. Combine blueberries and water in a small saucepan and bring to a boil.
  3. Lower heat and simmer for 3-5 min, till berries are soft. Add in cornstarch and 1/3 c. sugar, stirring constantly till the mix is thickened. Let simmer for 2 more min and remove from heat. Set aside.
  4. Combine 1 1/4 c. flour, baking pwdr, baking soda, and 2/3 c. sugar in a mixing bowl. Cut in 4 tb butter till mix resembles fine crumbs.
  5. Combine buttermilk, egg and vanilla extract and add in to the mix, stirring till just moistened.
  6. Spread half of the dough mix in an 8" x 8" baking dish. Spread the fruit mix over the dough. Drop spoonfuls of remaining dough over the fruit.
  7. In a separate bowl, cut 2 tb butter into remaining 1/4 c. flour and 1/4 c. sugar till mix resembles fine crumbs. Sprinkle over top of coffee cake.
  8. Bake at 350 for 45 min or possibly till top is golden. Serve hot.
