Ingredientes

  • 1 c. black olives pitted, liquid removed, with 5 ounce juice reserved
  • 1/4 c. lemon juice
  • 1/4 c. Tabasco brand Pepper Sauce
  • 3/4 c. yogurt
  • 3 c. tomatoes in medium dice
  • 1/4 c. extra virgin olive oil
  • 12 x flour torillas - (12" dia) grilled
  • 3 c. shredded Iceberg lettuce shredded
  • 36 ounce grilled beef thinly sliced
  • 1 c. crumbled feta cheese

Direcciones

  1. To make the wrap sauce, combine the black olives, olive juice, lemon juice and Tabasco brand Pepper Sauce in a blender. Puree. Add in yogurt and mix well. Hold refrigerated.
  2. Combine the tomatoes and extra virgin olive oil. Add in salt and pepper to taste. Hold refrigerated.
  3. For each serving, spread 3/4 of one flour tortilla with 2 Tbsp. of the wrap sauce. Top with 1 1/2 ounces lettuce, 1 1/2 ounces marinated tomatoes and 3 ounces of the grilled beef. Top with 1/2 oz of the feta cheese. Roll up tightly, ending with the uncovered portion of the tortilla.
  4. This recipe yields 12 servings.
