Ingredientes

  • 4 med. yellow summer squash
  • 1 clove garlic, crushed
  • 1/4 c. extra virgin olive oil
  • 1 teaspoon chopped mint
  • 1/2 teaspoon salt
  • 3 tbsp. vinegar
  • 1 teaspoon honey

Direcciones

  1. Slice squash into 5 inch lengths 1/4 inch thick. Saute/fry squash and garlic in oil in heavy skillet for 7-8 min till tender. Add in remaining ingredients. Cook 3 min, stirring frequently.
