Greek Style Roasted Potatoes

Ingredientes

  • 4 x Potatoes, washed, peeled and cut in small chunks
  • 1/3 c. Lemon juice, (I used fresh)
  • 2 tsp Oregano Salt and pepper, (fresh grnd pepper)
  • 1/3 c. Extra virgin olive oil

Direcciones

  1. Mix lemon juice, oregano, salt and pepper. Toss potatoes with mix; marinate for up to one hour. Transfer the mix to a baking dish.
  2. sprinkle with 1/3 c extra virgin olive oil (I used less), dot with margarine, cover with foil.
  3. Bake at 350 degrees for 30-40 min, till potatoes are almost done.
  4. remove the foil and continue baking, stirring carefully, till they are soft and lightly browned. Add in a little warm water during baking, if necessary, to prevent scorching. I found I needed to bake the potatoes longer; keep an eye on them.
