.%3C/p%3E%3Cp%3EAlton%20Brown%20has%20his%20Best%20Ever%20Green%20Bean%20Casserole%20recipe%20that%20is%20very%20very%20good.%20What%20I%20like%20about%20it%20most%20is%20that%20it%20doesn't%20use%20canned%20soup.%20You%20have%20fresh%20mushrooms,%20half%20and%20half,%20broth%20and%20other%20wonderful%20ingredients....without%20the%20MSG.%20Ya%20I%20know...those%20fried%20onions%20are%20loaded%20with%20MSG...but%20I%20just%20can't%20make%20this%20dish%20without%20them...so%20once%20in%20a%20while...I%20turn%20a%20blind%20eye.%20(a%20girls%20gotta%20do%20what%20a%20girls%20gotta%20do.)%3C/p%3E%3Cp%3EFor%20the%20past%20several%20years,%20I've%20been%20making%20Alton's%20Green%20Bean%20Casserole.%20It%20only%20takes%20a%20little%20more%20time%20than%20the%20%22original%22%20Campbell's%20Soup%20version.%20You%20can%20do%20it%20ahead%20of%20time%20and%20just%20stick%20it%20in%20the%20fridge%20(before%20adding%20the%20fried%20onions)%20until%20you're%20ready%20to%20cook%20it.%20If%20you've%20found%20that%20the%20sauce%20has%20thickened%20more%20than%20you%20like,%20just%20add%20a%20little%20broth%20or%20half%20and%20half%20and%20you're%20ready%20to%20go.%3C/p%3E%3Cp%3EI%20know%20that%20most%20people%20either%20hate%20it%20or%20love%20it....but%20Green%20Bean%20Casserole%20has%20been%20a%20favorite%20of%20mine%20since%20I%20was%20a%20child%20and%20I%20can't%20imagine%20a%20holiday%20meal%20with%20out.%3C/p%3E%3Cp%3EGreen%20Bean%20Casserole%20-%20without%20the%20canned%20soup%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375'%20F.%3C/p%3E%3Cp%3EIn%20a%20large%2012%22%20cast%20iron%20skillet%20(or%20other%20oven%20safe%20skillet)%20melt%20the%20butter%20over%20medium%20heat.%20Add%20the%20mushrooms,%20salt%20and%20pepper%20and%20cook,%20stirring%20occasionally,%20until%20the%20mushrooms%20start%20giving%20up%20some%20of%20their%20liquid,%20about%205%20minutes.%20Add%20the%20garlic%20and%20nutmeg%20and%20continue%20cooking%20for%20another%20minute%20or%20so.%3C/p%3E%3Cp%3EAdd%20the%20flour,%20stir%20to%20combine%20and%20continue%20to%20cook%20for%20a%20minute.%20Stir%20in%20the%20broth%20and%20continue%20to%20cook%20for%20a%20minute.%3C/p%3E%3Cp%3ELower%20the%20heat%20to%20medium-low%20and%20pour%20in%20the%20half%20and%20half.%3C/p%3E%3Cp%3ECook%20for%20about%206%20-%208%20minutes,%20stirring%20occasionally%20until%20the%20mixture%20thickens.%20Remove%20from%20heat%20and%20stir%20in%20the%20green%20beans.%20(this%20is%20the%20point%20where%20I%20let%20it%20cool%20a%20little%20and%20place%20in%20the%20fridge%20until%20I'm%20ready%20to%20continue).%3C/p%3E%3Cp%3ENote:%20If%20you%20put%20this%20dish%20in%20the%20fridge,%20the%20sauce%20may%20have%20thickened%20even%20more%20while%20sitting.%20If%20that's%20the%20case,%20just%20add%20a%20little%20(1/4%20cup?)%20of%20broth%20until%20you%20have%20the%20desired%20consistency%20again.%3C/p%3E%3Cp%3EStir%20in%201/2%20cup%20of%20French%20Fried%20Onions.%20Sprinkle%20the%20remaining%20onions%20on%20top.%3C/p%3E%3Cp%3EPlace%20in%20the%20oven%20and%20cook%20for%20about%2020%20minutes,%20until%20bubbly%20and%20the%20onions%20have%20browned%20a%20bit.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it.%20Easy%20peasy.%20Better%20than%20ever.%3C/p%3E%3Cp%3Ea%20vintage%20green%20bean%20casserole....just%20updated%20a%20little.%3C/p%3E){kind=link}
