Green Beans With Red Onion Salad

Ingredientes

  • 1 lb fresh green beans Salt, to taste
  • 1 tsp Dijon-style mustard
  • 1 Tbsp. red wine vinegar
  • 3 Tbsp. vegetable oil Freshly grnd pepper to taste
  • 1/2 c. coarsely minced red onions

Direcciones

  1. Cut off and throw away the tips of the beans. Break the beans into 2 inch lengths. Drop beans into boiling salted water to cover and return to a boil. Simmer about 7 min or possibly till crisp and tender. Don't overcook.
  2. Drain. Let cold.
  3. To make the dressing, put the mustard in a salad bowl and add in the vinegar. Start beating with a wire whisk while adding the oil. Add in salt and pepper and the onions.
  4. Add in the beans and toss till blended.
  5. Serve at room temperature.
