Receta Green Eggs & Ham

- Peel and slice the eggs in half.
- Place the egg yolks into a large mixing bowl.
- Set the egg white halves aside for now.
- Peel the avocado and remove the stone.
- Add the avocado to the egg yolks and mash with a potato masher until slightly chunky.
- Add the juice of the lime and stir well.
- Add the chilli sauce, mayonnaise, chopped coriander, seasoning, and stir until very well blended.
- The mix should look fairly green by now.
- Taste and adjust the seasoning.
- If you wish to add more of the green chilli sauce at this point for a tangier filling.
- Stir in the celery and onion until well blended.
- Put the green mix into a piping bag with a large open tip.and set aside.
- Set the egg white halves in a lettuce lined platter,
- Pipe the green egg filling into each half.
- Roll the sliced ham and tuck a roll between each of the egg halves.
- Roll any extra ham and keep for refills
- Each serving = 2 halves and a slice of ham (or 2)
