Green Peas with Quail Eggs

Another delicious vegetable dish consisting of green peas, pork, shrimps, vegetables like chayote, string beans and quail eggs. Very similar to the popular chop suey dish. If some how you are allergic to shrimps, you can substitute the pork and shrimps with chicken meat, liver and giblets. And the substitute the shrimp juice with chicken broth.

Ingredients:

Cook pork in 1/2 cup water until tender. Set aside.

Saute garlic until golden brown. Drop in onion. After 2 minutes, add pork and shrimps. Stir cook and season with fish sauce.

Then add all the ingredients except sweet peas, quail eggs, and cashew nuts.

Pour in water with shrimp juice and cover. (To make the shrimp juice, pound the shrimp heads until grounded. Pour a small amount of water and strain to collect the juice).

Let boil until the vegetables are half cooked. Add sesame oil and thicken with dissolved cornstarch.

Then add green peas. Cook for 2 minutes more and mek sure not to overcook the vegetables.

Add quail eggs when you are about to serve and sprinkle with chopped cashew nuts on top.
