.%20%20This%20time,%201kg%20became%20half%20of%20a%20green%20tomato%20and%20split%20pea%20curry.%20%20It%20had%20the%20texture%20of%20mashed%20potato%20but%20it%20tasted%20good.%20%20Copious%20quantities%20of%20garam%20masala,%20chillies,%20garlic,%20ginger,%20curry%20leaves%20and%20coconut%20milk%20make%20ANYTHING%20taste%20ace.%20%20Slightly%20sour,%20slightly%20sweet%20green%20tomatoes%20are%20great%20for%20currying.%3C/p%3E%3Cp%3E1kg%20made%20enough%20for%20two%20of%20us%20to%20stuff%20ourselves%20AND%20put%20two%20more%20meals%20worth%20in%20the%20freezer.%20%20I%20wasn't%20making%20the%20rest%20of%20these%20into%20curry,%20nor%20could%20I%20face%20eating%20nothing%20but%20sour%20green%20tomatoes%20for%20two%20weeks.%20%20So.%20%20An%20experiment%20in%20preserving%20has%20ensued.%20%20I%20don't%20really%20eat%20the%20kind%20of%20chutney%20you%20have%20with%20cheese%20sandwiches.%20%20Less%20that%20I%20don't%20like%20it,%20more%20that%20its%20space%20in%20my%20life%20is%20very%20nicely%20filled%20with%20Marmite%22%20(mmmm%20marmite).%20I%20do,%20though,%20love%20to%20have%20pickle%20with%20my%20curries%20-%20pre-made%20ones%20from%20the%20supermarket%20start%20to%20taste%20closer%20to%20real%20when%20you%20have%20pickle%20with%20them.%20Home-made%20ones%20that%20miss%20the%20mark%20slightly%20come%20alive%20with%20a%20bit%20of%20pickle.%20So%20that%20was%20my%20choice.%3C/p%3E%3Cp%3EThe%20internet%20wasn't%20particularly%20good%20on%20pickle%20recipes.%20We%20found%20this%20one,%20but%20if%20you%20read%20it%20you'll%20see%20that%20the%20ingredients%20in%20the%20list%20don't%20actually%20match%20what's%20going%20on%20in%20the%20directions.%20I%20sort%20of%20figured%20something%20out%20when%20we%20got%20to%20it,%20anyway%20-%20it's%20mostly%20just%20useful%20for%20approximate%20quantities%20of%20vinegar%20and%20oil.%20It%20would%20have%20been%20good%20for%20salt,%20too,%20except%20I%20was%20left%20guessing%20at%20that...%20I%20also%20had%20a%20guess%20at%20the%20correct%20method%20for%20sterilising%20and%20sealing%20kilner%20jars%20-%20it%20seems%20to%20have%20worked,%20but%20there%20may%20well%20be%20better%20ways%20and%20it's%20not%20like%20I've%20kept%20anything%20in%20them%20for%20very%20long%20yet...%3C/p%3E%3Cp%3EGreen%20Tomato%20Pickle%3C/p%3E%3Cp%3EI%20made%20this%20in%201kg%20batches,%20it%20was%20simpler%20that%20way.%20For%202kg%20of%20fruit%20I%20used%203%203inch%20tall%20kilner%20jars%20and%204%20little%20250ml%20(ish)%20jam%20jars.%20I'd%20probably%20just%20use%20whatever%20empty%20jars%20with%20metal%20lids%20I%20had%20to%20hand%20doing%20this%20again%20though%20-%20screw%20top%20jars%20are%20fine.%3C/p%3E%3Cp%3E1%20kg%20green%20tomatoes,%20diced.%20I'm%20pretty%20sure%20it%20would%20work%20with%20regular%20tomatoes,%20too,%20but%20it%20would%20obviously%20be%20sweeter.%3C/p%3E%3Cp%3EA%20handful%20of%20curry%20leaves%20-%20ask%20any%20Indian%20grocer,%20they%20really%20make%20a%20difference.%3C/p%3E%3Cp%3E12%20inch%20long%20hot%20green%20chillies,%20stems%20cut%20off%20but%20otherwise%20left%20whole%3C/p%3E%3Cp%3E1%20tsp%20hot%20chilli%20powder%3C/p%3E%3Cp%3ESalt%20-%20around%201%20and%20a%20half%20tsp?%20You'll%20have%20to%20taste.%20It's%20a%20condiment,%20salty%20is%20ok.%3C/p%3E%3Cp%3EBoil%20your%20jars%20and%20lids%20for%20the%20time%20it%20takes%20to%20do%20everything%20else.%3C/p%3E%3Cp%3EHeat%20the%20oil%20and%20add%20the%20whole%20spices.%20Fry%20for%20a%20few%20minutes%20then%20add%20the%20ginger%20and%20garlic%20and%20fry%20for%20a%20few%20more%20minutes.%20Add%20the%20tomatoes%20and%20chillies%20and%20stir%20to%20coat,%20making%20sure%20the%20seeds%20are%20well%20distributed.%20Cook%20for%20about%20ten%20minutes%20until%20the%20fruit%20has%20begun%20to%20soften%20and%20the%20oil%20is%20floating%20on%20the%20top.%20Add%20the%20ground%20spices%20and%20stir%20again,%20then%20add%20the%20vinegar,%20salt%20and%20curry%20leaves.%20Stir%20to%20combine%20and%20turn%20off%20the%20heat.%20Remove%20the%20jars%20from%20their%20water%20bath%20using%20tongs%20and%20drain%20out%20enough%20water%20to%20fill%20every%20jar%20that%20fitted%20in%20the%20pot.%20Fill%20them,%20and%20then%20return%20them%20to%20the%20water%20bath%20with%20their%20lids%20closed%20but%20not%20tightly%20-%20the%20point%20of%20the%20subsequent%20boiling%20is%20to%20evacuate%20the%20air%20still%20inside%20the%20jars%20so%20the%20lid%20has%20to%20open%20a%20crack%20to%20let%20the%20air%20move.%20Boil%20them%20for%2010%20minutes,%20then%20carefully%20remove%20and%20tighten%20the%20lids.%20When%20they%20cool,%20they'll%20suck%20the%20lids%20tightly%20closed%20and%20hopefully%20seal%20nicely%20for%203-6%20months.%20The%20high%20acid%20content%20should%20help%20keep%20them%20good%20for%20a%20while.%3C/p%3E%3Cp%3EBy%20the%20way?%20The%20drips%20from%20this%20tasted%20ACE.%20Not%20that%20spicy%20yet,%20but%20they%20should%20pack%20a%20punch%20after%20a%20week%20or%20two%20I%20think.%20YUM.%3C/p%3E){kind=link}
