Grilled Chicken Ceasar Salad

Ingredientes

  • 1/3 c. Plus 1 tb extra-virgin extra virgin olive oil, divided
  • 2 slc French bread, crusts removed cut into 1/2" cubes
  • 1 lb Cooked boneless, skinless
  • 1/2 tsp Salt and pepper (ea)
  • 4 x Anchovy fillets, minced
  • 2 tsp Chopped garlic
  • 2 Tbsp. Fresh lemon juice
  • 1 Tbsp. Dijon mustard
  • 2 dsh Red pepper sauce
  • 1 lrg Head romaine lettuce, torn
  • 3 Tbsp. Freshly grated Parmesan cheese

Direcciones

  1. Heat 1 Tbsp. oil in a large skillet over medium-high heat. Add in bread cubes and cook, stirring occasionally, till lightly browned, about 5 min.
  2. Drain on paper towels and set aside. Mash anchovies, garlic, and remaining 1/4 tsp. salt into a paste in a large salad bowl. Add in lemon juice, mustard, pepper sauce and remaining 1/4 ts pepper; whisk till blended. Gradually whisk in remaining 1/3 c. oil.
  3. Add in chicken and toss to coat. Add in lettuce, Parmesan cheese and croutons; toss well.
