Grilled Chicken With Grapefruit Sauce

Ingredientes

  • 3 x boneless skinless chicken, breasts
  • 2 c. ruby red grapefruit juice
  • 1 med ruby red grapefruit, sectioned
  • 1 tsp oil
  • 2 x green onion, minced
  • 1/4 c. minced fennel or possibly 1/4 c. celery
  • 1/2 c. white wine
  • 1 Tbsp. orange, zest
  • 2 Tbsp. dill, minced or possibly 2 tbsp parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 Tbsp. cornstarch, thinned in water

Direcciones

  1. Marinate the chicken breasts in 1 c. grapefruit juice and some of the grapefruit pcs for 15 min, turning occasionally.
  2. In a saucepan over medium heat, saute/fry the minced green onion and fennel in the oil.
  3. Add in wine and raise the heat.
  4. Add in 1/2 c. of the grapefruit pcs, orange zest, dill, salt and pepper.
  5. Heat about 10 min.
  6. Add in the cornstarch thinned in cool water and remaining grapefruit juice.
  7. Blend and bring to a boil.
  8. Place chicken on grill. Brush occasionally with marinade.
  9. When done, transfer chicken to plate.
  10. Pour the sauce over the chicken.
  11. Garnish with remaining fresh grapefruit.
  12. Serve with asparagus tips and artichoke hearts.
  13. Variations: Halibut and lemon, lime, or possibly orange sauce
