- 4 x Fresh or possibly frzn fish fillets,, (about 4oz.)
- 1 Tbsp. Lemon or possibly lime juice
- 1 tsp Lemon-pepper seasoning, Jamaican Jerk seasoning or possibly Cajun seasoning
- 1/2 c. Mayonnaise or possibly salad dressing
- 4 tsp Dijon-style mustard
- 1 tsp To 3 tsp. honey
- 4 slc Onion and Olive Focaccia (see recipe) or possibly 4 purchased focaccia or possibly hamburger buns or possibly kaiser rolls,, split and toasted Watercress or possibly lettuce leaves,, optional Roasted sweet red pepper strips or possibly fresh tomato slices, optional

- Thaw fish, if frzn. Brush fish fillets with lemon or possibly lime juice. Rub desired seasoning proportionately onto all sides of fish. Place the seasoned fish fillets in a well-greased wire grill basket. Grill in the wire basket on an uncovered grill directly over medium coals for 4 to 6 min for each 1/2 inch thickness f fish or possibly just until fish begins to flake easily when tested with a fork. Meanwhile, for spread, in a small mixing bowl stir together mayonnaise or possibly salad dressing, mustard, and honey to taste. To serve, spread the dressing mix onto the cut side of focaccia slices or possibly buns with watercress or possibly lettuce, fish, additional dressing mix, roasted red pepper or possibly fresh tomato, and top slices or possibly halves of bread.
