Grilled Mackerel With Chopped Tomatoes

Ingredientes

  • 6 x mackerel fillets - (5 ounce ea)
  • 3 tsp fresh lemon juice
  • 1/4 tsp freshly-grnd black pepper
  • 1/2 tsp crumbled dry oregano
  • 2 c. minced fresh tomato
  • 1/2 c. minced fresh parsley

Direcciones

  1. Arrange mackerel pcs in a shallow baking pan. Combine lemon juice, pepper, and oregano; sprinkle over the fish.
  2. Grill mackerel over medium-warm coals about 3 to 4 min on each side, depending on the thickness of the fish. Fish is done when it flakes easily when tested with a fork. (This recipe may also be prepared in an oven broiler.)
  3. Place mackerel on individual serving dishes. Combine tomato and parsley and spread decoratively around and over the mackerel. Serve fish warm.
  4. This recipe yields 6 servings.
