Receta Grilled Mackerel With Chopped Tomatoes

Ingredientes
- 6 x mackerel fillets - (5 ounce ea)
- 3 tsp fresh lemon juice
- 1/4 tsp freshly-grnd black pepper
- 1/2 tsp crumbled dry oregano
- 2 c. minced fresh tomato
- 1/2 c. minced fresh parsley
Direcciones
- Arrange mackerel pcs in a shallow baking pan. Combine lemon juice, pepper, and oregano; sprinkle over the fish.
- Grill mackerel over medium-warm coals about 3 to 4 min on each side, depending on the thickness of the fish. Fish is done when it flakes easily when tested with a fork. (This recipe may also be prepared in an oven broiler.)
- Place mackerel on individual serving dishes. Combine tomato and parsley and spread decoratively around and over the mackerel. Serve fish warm.
- This recipe yields 6 servings.
