Grilled Mussels With Garlicky Herb Sauce

Ingredientes

  • 3 lb large mussels
  • 1 Tbsp. chopped garlic
  • 1 Tbsp. chopped shallot
  • 3/4 c. clarified butter
  • 2 Tbsp. dry white wine
  • 1/2 tsp salt Freshly-grnd black pepper to taste
  • 1/3 c. chopped parsley

Direcciones

  1. Soak mussels in salted cool water for 30 min; drain and rinse. Pull off any beards from mussels; chill till ready to grill.
  2. Combine garlic, shallot, butter, wine, salt and pepper to taste in small saucepan. Cook over medium-low heat till butter is simmering, about 5 min. Stir in parsley. Adjust seasonings and keep hot.
  3. Put mussels on warm grill in single layer. Cover and cook till shells open, about 2 to 3 min; throw away any mussels with unopened shells.
  4. Divide proportionately among 4 bowls. Pour warm herb sauce into 4 small dishes. Serve mussels immediately with sauce for dipping.
  5. This recipe yields 4 servings.
