- 1 cup (dry) rice, cooked according to package directions
- 2 cups chopped iceberg lettuce
- 2 cups chopped tomato
- 1 1/3 cups shredded cheese
- 1 can black beans, rinsed and drained
- 1/4 cup chopped cilantro
- 1 cup fresh salsa
- 1 lime, sliced into wedges
- Avocado- Lime Crema:
- 1 large avocado, mashed
- 1/4 cup sour cream
- 1/2 teaspoon freshly squeezed lime juice (use a wedge from above)
