Receta Grilled Scallops on Tomato Tarragon Pasta

My herbs have been doing very well all summer – they all seem to thrive in the cooler weather.

Everyone is always singing the praises of cilantro and basil…. I’m rather fond of tarragon and lemon thyme as well. There are a lot of wonderful herbs out there people – expand your palates.

Use a grill pan or basket for the scallops for easier handling and be careful not to overcook.

Or they can be quickly pan-fried in a hot skillet. They release a lot of liquid when cooked, so be careful not to crowd.

Grilled Scallops on Tomato Tarragon Pasta

Total time: 30 minutes

Ingredients:

Instructions:

Rinse scallops and pat dry.

Mix oil and paprika. Add scallops and stir to coat.

Grill over direct heat 3 – 5 minutes per side, just until they are opaque.

Note: Could also be quickly sautéed in a nonstick skillet over medium high heat for about the same amount of time.

Pasta: Cook pasta according to package directions. Drain.

Heat 2 tsp oil in a small saucepan over medium heat. Add onion and sauté until tender.

Add Prosciutto and sauté until crisp.

Add tomato sauce, vinegar, tarragon, thyme and heat through. Keep warm until needed.

To Finish: Combine drained pasta with tomato sauce.

Divide pasta onto two plates. Top with seared scallops and serve.

It’s started early this year.

All summer long we have small-bodied, long-legged spiders that spin webs everywhere. I can clean a book shelf in the morning (which is rare) and there will be new webs by afternoon. If I sit still too long (which is never) there will be a web on me.

They’re everywhere and get into everything. I’ve even found them inside the computers.

But they’re small and they don’t terrify me. I can vacuum them up with no problem. I did, in fact, vacuum up several hundred before our dinner party.

I don’t like them, but I can deal with them.

Last night I found the first big one. It was one of the big-bodied, hairy-legged spiders that mon mari has to attack with a sledgehammer.

They’re too big for the Hoover.

They invade my space for 4 – 5 weeks every fall. I’m sure they’re here year round, but I only see them in the late summer.

It’s the male spiders that are out and about, looking for a little action. I wrote more about them a few years ago. I’m not going to repeat it as I get shivers just thinking about them – click and read if you’re interested..

On the positive side, I’m going to the US next week so I’ll miss 2 weeks of prime spider season.

On the negative side, I won’t be here to spot them and get mon mari to dispatch them. Which means they’ll all still be here when I get back.

OMG! Maybe they’ll all have ‘gotten lucky’ and next year there will be lots more!!!!!
