Grilled Steak With Tarragon Cream Sauce

Ingredientes

  • 1 kg beef, rump steaks
  • 125 gm butter
  • 1 tsp garlic, crushed
  • 1/2 tsp tarragon, minced
  • 1 tsp mustard, French
  • 4 Tbsp. brandy
  • 4 Tbsp. cream
  • 1/10 tsp salt, pepper

Direcciones

  1. Season steaks with pepper.
  2. Heat 60g (2oz) butter in large pan. Add in steaks, cook till done. Remove steaks from pan, keep hot, drain off butter from pan.
  3. Add in remaining butter to pan, stir till melted. Add in crushed garlic, cook 1 minute, add in tarragon and mustard, stir till smooth and combined. Add in brandy, cream, salt and pepper, stir sauce over low heat till sauce is reduced by half.
  4. Serve steaks with sauce spooned over.
  5. Serves 4.
