- Prepare a warm fire. Brush carrots lightly with extra virgin olive oil and grill, turning every 5 to 7 min and brushing with more oil, till lightly browned and crisp or possibly tender, about 20 min. As soon as carrots are cold sufficient to handle, slice them and place them in a medium bowl.
- Add in all other ingredients to carrots and toss to mix. Cover and marinate at room temperature at least 2 hrs, tossing occasionally, or possibly chill overnight or possibly as long as 3 days. Remove carrots and other vegetables with a slotted spoon before serving.
