Grilled Wild Salmon With Charentais Melon Salsa

Ingredientes

  • 1 x 285 gram fil wild salmon, (10z)
  • 1 x Curly endive
  • 1 x Charentias lemon, (ripe)
  • 1 bn Coriander
  • 2 x Warm chillies, (2 to 3)
  • 2 med Red onions
  • 3 x Limes
  • 4 Tbsp. Thai fish sauce, (50ml)

Direcciones

  1. Grill the salmon till just cooked and leave to cold slightly. Meanwhile wash the curly endive and pick in bite size pcs.
  2. Next, cut the melon in half, remove the seeds and cut the flesh into small cubes. Then, chop the coriander leaves, chillies and red onion and mix all these in a bowl. Squeeze over the lime juice, add in the Thai fish sauce and season with salt and pepper.
  3. To serve:Dress the salad with a bit of extra virgin olive oil, break the salmon into chunks and put on the salad, then spoon over the salsa.
