- Shake the grouse pcs in a bag with flour, salt, and pepper. In a casserole dish saute/fry the pcs in oil till golden brown-brown. Add in the onions, green pepper, celery, and parsley. Saute/fry for 2 min. Add in the wine, oregano, mace, cloves, and cover, and simmer for 10 to 15 min-till meat is tender.
- In a separate pan saute/fry the mushrooms in butter for a few min, add in the tomato sauce. Stir together with the sliced olives. Add in this mix to the grouse pan and serve.
- This recipe yields 6 servings.
