.%20%20But%20The%20Boy%20eats%20them%20too,%20so%20I%20wouldn't%20say%20that%20they%20don't%20appeal%20to%20kids.%3C/p%3E%3Cp%3EA%20few%20notes:%3C/p%3E%3Cp%3E*%20I%20make%20a%20batch%20using%20about%204-5%20cups%20of%20cheese,%20which%20gives%20us%20several%20meals.%20%20The%20cheese%20filling%20keeps%20well%20in%20the%20fridge%20for%203-4%20days%20as%20long%20as%20the%20onion/pepper%20mixture%20isn't%20soggy%20when%20you%20add%20it%20to%20the%20cheese.%3C/p%3E%3Cp%3E*%20I%20prefer%20to%20use%20pepper%20jack,%20but%20any%20cheese%20you%20have%20on%20hand%20can%20be%20used,%20or%20even%20a%20mixture%20of%20cheese%20like%20I%20used%20below.%3C/p%3E%3Cp%3E*%20I%20like%20the%20tangy%20flavor%20pickled%20jalapenos%20give%20to%20the%20mixture--it%20adds%20another%20dimension.%20%20But%20fresh%20jalapeno%20could%20also%20be%20used,%20or%20left%20out.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20Roasted%20Red%20Pepper%20&%20Cumin%20Quesadillas:%20olive%20oil,%20onion,%20roasted%20red%20pepper,%20jalapeno,%20green%20onions%20(optional),%20parsley%20(optional),%20cumin,%20oregano,%20salt%20and%20pepper%20(not%20pictured),%20tortillas,%20cheese%3C/p%3E%3Cp%3EThe%20first%20step%20is%20roasting%20the%20pepper%20(click%20for%20step%20by%20step).%20%20But%20lately,%20jarred%20roasted%20peppers%20cost%20less%20than%20fresh%20peppers.%20%20Price%20check%20before%20deciding%20which%20to%20buy.%3C/p%3E%3Cp%3EBesides,%20I'm%20feeling%20lazy%20today.%20%20I'm%20glad%20I%20had%20jarred%20peppers.%3C/p%3E%3Cp%3ENext,%20heat%20olive%20oil%20in%20a%20skillet.%20%20Saute%20the%20onion%20until%20it%20is%20browned%20in%20spots.%20%20Then%20add%20the%20chopped%20red%20pepper%20and%20jalapeno.%20%20Saute%20this%20mixture%20until%20there%20is%20no%20liquid%20left.%20%20Don't%20want%20the%20cheese%20to%20get%20soggy.%3C/p%3E%3Cp%3EWhile%20the%20onion%20mixture%20cooks,%20mix%20cumin,%20oregano,%20parsley,%20and%20green%20onion%20with%20the%20cheese.%20%20I%20find%20my%20hands%20work%20best.%20%20And%20I've%20also%20found%20that%20it's%20better%20to%20mix%20the%20seasonings%20in%20before%20adding%20the%20onion%20mixture.%3C/p%3E%3Cp%3EThe%20green%20onion%20and%20parsley%20are%20really%20just%20lagnaippe%20(is%20there%20a%20Spanish%20term%20for%20that?).%20%20I%20use%20them%20if%20I%20have%20them;%20I%20don't%20buy%20them%20specifically%20for%20this%20recipe.%3C/p%3E%3Cp%3EOh,%20they%20are%20so%20good!%3C/p%3E%3Cp%3EBut%20remember,%20I'm%20lazy%20today.%20%20I%20went%20with%20store%20bought%20tortillas.%3C/p%3E%3Cp%3ELay%20the%20tortillas%20out%20on%20a%20flat%20surface%20and%20top%20with%20the%20cheese%20mixture.%3C/p%3E%3Cp%3EI%20used%20to%20melt%20some%20butter%20in%20a%20skillet,%20slap%20down%20a%20tortilla%20and%20get%20to%20work.%20%20The%20butter%20causes%20the%20tortillas%20to%20get%20nice%20and%20brown%20and%20crunchy%20on%20the%20outside.%20%20I've%20been%20skipping%20the%20butter%20though.%20%20And%20it%20still%20tastes%20great.%3C/p%3E%3Cp%3EOnce%20the%20cheese%20starts%20to%20melt,%20fold%20the%20tortilla%20in%20half.%20%20Keep%20in%20the%20pan%20until%20both%20sides%20have%20browned.%3C/p%3E%3Cp%3ECut%20into%20wedges%20and%20enjoy.%3C/p%3E%3Cp%3ERoasted%20Red%20Pepper%20and%20Cumin%20Quesadillas%3C/p%3E%3Cp%3Efrom%20Ms.%20en%20Place%3C/p%3E%3Cp%3ERoast%20a%20bell%20pepper%20over%20stove%20burner,%20on%20a%20gas%20grill,%20or%20under%20the%20broiler%20until%20skin%20blisters%20and%20blackens.%20Place%20pepper%20in%20a%20plastic%20bag%20to%20steam%20off%20skin.%20When%20cool%20enough%20to%20handle,%20peel,%20seed,%20and%20chop.%20OR%20use%20jarred%20roasted%20red%20peppers%20if%20more%20cost%20effective%20and%20to%20save%20time.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20skillet%20and%20saut%C3%A9%20onion%20until%20tender%20and%20browned%20in%20spots.%20Add%20the%20chopped%20roasted%20red%20pepper%20and%20jalapeno%20to%20the%20onions%20and%20continue%20to%20saut%C3%A9%20until%20the%20mixture%20is%20dry.%20Set%20mixture%20aside%20to%20cool%20completely.%3C/p%3E%3Cp%3EWhile%20onions%20cook%20or%20while%20you%20are%20waiting%20for%20the%20mixture%20to%20cool,%20mix%20cumin,%20oregano,%20salt%20and%20pepper%20to%20taste,%20and%20green%20onion%20or%20parsley,%20if%20desired%20with%20the%20cheese.%20Combine%20well.%3C/p%3E%3Cp%3EAdd%20the%20cooled%20onion-pepper%20mixture%20to%20the%20cheese%20and%20combine%20well.%20This%20will%20keep%20in%20the%20fridge%20for%203-4%20days%20as%20long%20as%20the%20onion%20mixture%20was%20had%20no%20excess%20liquid.%3C/p%3E%3Cp%3ELay%20out%20tortillas%20on%20countertop.%20Sprinkle%20cheese%20mixture%20over%20the%20surface%20of%20each%20tortilla,%20leaving%20a%20slight%20margin%20bare.%20If%20desired,%20melt%20a%20small%20amount%20of%20butter%20in%20a%20skillet.%20Place%20one%20cheese-topped%20tortilla%20in%20a%20heated%20pan%20(med.%20heat).%20When%20the%20cheese%20just%20starts%20to%20melt,%20fold%20the%20tortilla%20in%20half.%20Press%20gently%20to%20seal.%20Flip%20tortilla%20to%20get%20even%20browning%20on%20both%20sides.%20Remove%20from%20pan%20once%20the%20cheese%20melts%20completely%20and%20the%20tortilla%20has%20browned%20a%20bit.%20Keep%20warm.%20Repeat%20with%20remaining%20tortillas.%20Cut%20each%20tortilla%20in%20wedges%20and%20serve%20immediately.%3C/p%3E){kind=link}
