%20know,%20I'm%20having%20a%20hard%20time%20with%20the%20intense%20flavor%20of%20whole%20wheat.%20It's%20never%20been%20my%20thing.%20But%20I'm%20working%20through%20it.%20For%20this%20recipe,%20I%20decided%20to%20make%20a%20few%20changes.%3C/p%3E%3Cp%3EFirst:%20I%20halved%20the%20whole%20wheat%20flour%20and%20made%20up%20the%20difference%20with%20all%20purpose%20flour.%3C/p%3E%3Cp%3ESecond:%20I%20figured%20if%20we're%20going%20with%20most%20of%20the%20ingredients%20that's%20found%20in%20guacamole,%20I%20might%20as%20well%20add%20the%20remaining....so%20I%20added%20diced%20onions%20(in%20my%20case,%20they%20were%20red%20onions%20but%20whatever%20onion%20you%20like%20would%20be%20great)%20and%20I%20added%20some%20jalapenos.%3C/p%3E%3Cp%3EThird:%20I%20didn't%20want%20to%20make%20a%20%22loaf%22.%20With%20the%20last%20assignment%20I%20didn't%20end%20up%20making%20the%20southwestern%20focaccia%20so%20I%20decided%20to%20make%20up%20for%20it%20with%20this%20recipe.%3C/p%3E%3Cp%3ESooooo....I%20took%20that%20lovely,%20pale%20green%20dough%20with%20the%20red%20tomato%20flecks%20(you%20see...the%20dough%20had%20garlic,%20tomato%20and%20avocado%20mixed%20in%20along%20with%20my%20onion%20and%20jalapeno)...and%20I%20rolled%20it%20out.%20Then%20I%20had%20another%20light%20bulb%20moment.....%20the%20focaccia%20loaves%20that%20I%20see%20in%20the%20stores%20always%20have%20stuff%20on%20top...so%20I%20sprinkled%20on%20some%20cheddar%20and%20more%20jalapenos%3C/p%3E%3Cp%3EPlopped%20it%20in%20a%20hot%20425'F%20oven%20and%20baked%20it%20for%20about%2025%20minutes%3C/p%3E%3Cp%3EOoooh,%20ya...thats%20what%20I'm%20talking%20about!%3C/p%3E%3Cp%3ENow...what%20to%20do%20with%20this%20scrumptious%20hunk%20of%20bread?%3C/p%3E%3Cp%3ELets%20make%20some%20stuff%20to%20put%20in%20it.%3C/p%3E%3Cp%3EShredded%20chicken%20(sorry,%20I%20don't%20have%20a%20real%20recipe%20for%20it.%20Basically,%20chicken%20tenders%20seasoned%20with%20a%20mexican%20pollo%20seasoning%20that%20I%20get%20at%20the%20mexican%20store...sauteed%20and%20then%20shredded%20and%20then%20cooked%20a%20bit%20more%20in%20a%20cup%20of%20chicken%20broth%20and%20a%20pinch%20of%20cumin....reducing%20the%20broth%20until%20its%20close%20to%20being%20gone%20but%20not%20quite).%3C/p%3E%3Cp%3EGrilled%20Tomato%20Salsa%20(best%20I've%20ever%20made!!!%20recipe%20below)%20I%20found%20the%20recipe%20----%3EHERE%3C----%20and%20made%20a%20few%20changes%20based%20on%20taste%20and%20what%20was%20handy%20(without%20having%20to%20make%20a%20trip%20to%20the%20market.)%20I%20wish%20I%20had%20had%20some%20cilantro...the%20recipe%20called%20for%20it,%20but%20it%20was%20all%20gone.%3C/p%3E%3Cp%3Eand%20last,%20but%20not%20least....Guacamole.%20If%20you%20have%20a%20favorite%20salsa....just%20mixed%20a%20few%20tablespoons%20in%20with%20a%20few%20smashed%20avocado...and%20poof!%20super%20easy,%20super%20yummy%20guacamole.%3C/p%3E%3Cp%3EOk...Salsa...check%20this%20stuff%20out.%3C/p%3E%3Cp%3ESince%20Sir%20Sportsalot%20refuses%20to%20grill%20unless%20its%20blazing%20hot%20outside%20(or%20at%20least%20not%20cold%20and%20rainy,%20nor%20during%20the%20seasons%20of%20fall%20and%20winter)%20so%20I%20was%20unable%20to%20%22grill%22%20the%20tomatoes.%20But%20I%20have%20a%20cool%20pan%20that%20works%20like%20a%20grill%20grate...soooo...thats%20what%20I%20used%20for%20the%20tomatoes,%20indoors.%3C/p%3E%3Cp%3EGrill%202%20of%20the%20tomatoes,%20turning%20them%20as%20the%20skin%20chars%20so%20that%20all%20the%20sides%20are%20done.%20This%20makes%20it%20easy%20to%20peel%20the%20skins%20off.%20Once%20done,%20carefully%20remove%20the%20skin%3C/p%3E%3Cp%3ECut%20out%20the%20core%20and%20slice%20into%20quarters.%20The%20instructions%20said%20to%20remove%20the%20seeds...but%20I%20forgot.%20No%20biggy.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20for%20a%20few%20seconds%20chop%20the%20garlic,%20onions%20(green%20and%20white),%20(cilantro%20if%20you%20have%20it,%20about%201/4%20cups%20worth)%20and%20jalapenos.%20Scrape%20down%20the%20sides%20as%20necessary.%3C/p%3E%3Cp%3EAdd%20the%20grill%20tomatoes,%20green%20chilies,%20olive%20oil,%20lime%20juice%20and%20cumin...pulse%20a%20few%20times.%20Quarter%20the%20remaining%20tomato%20that%20wasn't%20grilled%20and%20continue%20pulsing%20until%20your%20salsa%20has%20reached%20its%20desired%20consistency.%20Salt%20and%20pepper%20to%20taste....and%20let%20rest%20for%20about%20an%20hour%20before%20serving,%20allowing%20the%20flavors%20to%20mesh.%3C/p%3E%3Cp%3EOh...and%20I%20had%20some%20dough%20left%20(and%20no%20tortilla%20chips)...so%20I%20made%20bread%20sticks%20by%20rolling%20the%20dough%20out%20to%20about%201/8%20-%201/4%20inch%20(8%20x%2012%20rectangle)%20then%20sliced%20the%20dough%20into%201%20inch%20strips%3C/p%3E%3Cp%3ETwisted%20them%20and%20placed%20them%20on%20a%20lightly%20grease%20cookie%20sheet%3C/p%3E%3Cp%3EBrushed%20on%20some%20olive%20oil%20and%20sprinkled%20a%20little%20garlic%20over%20them....baked%20them%20in%20a%20400'F%20oven%20for%20about%2016%20minutes%20and%20I%20foun
