- Fry the sliced onions with the salt pepper and around bay leaves in the fat till well caramelised.
- Stir in the flour adding more fat if necessary and fry till the mix has turned a good brown colour.
- Stir in the flavouring ingredients then slowly add in the guinness sugar and wine vinegar and gently bubble together for about 5 min.
- Stir in 300ml water and bubble for a further 15 min.
- A gutsy gravy which goes with anything meaty especiallv when served with mash.
- Serves 4
