I seriously doubt that there's any Irish D.N.A. on my German-Mexican family tree. However, my trip to Ireland (much too long ago) remains one of my most memorable trips. I fell in-love with the beauty of the Emerald Isle, the friendliness of the people-- and, of course, the food. For that reason, I'm happy to celebrate St. Patrick's Day by making some of my favorite recipes of either Shepherd's Pie or Corned Beef and Cabbage.

%20remains%20one%20of%20my%20most%20memorable%20trips.%20%20I%20fell%20in-love%20with%20the%20beauty%20of%20the%20Emerald%20Isle,%20the%20friendliness%20of%20the%20people--%20and,%20of%20course,%20the%20food.%20For%20that%20reason,%20I'm%20happy%20to%20celebrate%20St.%20Patrick's%20Day%20by%20making%20some%20of%20my%20favorite%20recipes%20of%20either%20Shepherd's%20Pie%20or%20Corned%20Beef%20and%20Cabbage.%3C/p%3E%3Cp%3EMy%20son%20and%20I%20love%20lamb,%20and%20I%20am%20slowing%20converting%20my%20husband's%20lackluster%20opinion%20of%20it%20over%20to%20our%20side.%20%20This%20St.%20Patrick's%20Day,%20on%20the%20Monterey%20Peninsula,%20brought%20us%20a%20long%20overdue%20rainstorm%20with%20intermittent%20hail%20showers.%20%20We%20were%20having%20friends%20over%20for%20dinner,%20and%20a%20hearty%20stew%20seemed%20the%20perfect%20dish.%20%20One%20of%20our%20family%20recipes%20is%20my%20Beef%20Stew%20recipe,%20but%20I%20wanted%20to%20keep%20with%20the%20Irish%20theme.%20%20%20The%20Whole%20Foods%20meat%20counter%20was%20busy%20packaging%20corned%20beef,%20but%20I%20asked%20for%20a%20boneless%20lamb%20shoulder%20roast.%3C/p%3E%3Cp%3E$24.00%20might%20seem%20a%20little%20pricey,%20but%20this%20is%20New%20Zealand%20lamb%20and%20my%20friends%20are%20worth%20it.%20I%20didn't%20have%20a%20recipe%20to%20work%20from,%20so%20I%20decided%20to%20adapt%20a%20little%20from%20my%20beef%20stew%20and%20pot%20roast%20recipe.%20%20Instead%20of%20using%20red%20wine,%20I%20opted%20to%20use%20Guinness%20beer--%20of%20course!%3C/p%3E%3Cp%3EWhile%20listening%20to%20an%20audio%20book,%20I%20patted%20the%20lamb%20dry%20and%20then%20patiently%20cut%20the%20roast%20into%20bite-sized%20pieces--then%20seasoned%20it%20with%20salt%20&%20pepper.%3C/p%3E%3Cp%3EI%20added%20about%201/4%20cup%20of%20flour%20and%20dredged%20the%20meat%20well%20until%20evenly%20coated%20with%20the%20flour.%20%20Using%20a%20very%20light%20coating%20of%20olive%20oil,%20I%20heated%20my%20trusty%20Dutch%20Oven%20to%20very%20high%20heat%20and%20added%20just%20enough%20lamb%20pieces%20so%20as%20not%20to%20crowed%20them.%3C/p%3E%3Cp%3ESeared%20meat%20is%20a%20beautiful%20sight,%20don't%20you%20think?%20That%20beautiful%20golden%20crust%20is%20going%20to%20give%20my%20sauce%20%20a%20lot%20of%20flavor.%3C/p%3E%3Cp%3EIt%20took%20three%20batches%20of%20about%208-10%20minutes,%20each,%20to%20create%20this%20lovely%20pile%20of%20lamb.%3C/p%3E%3Cp%3EA%20stew%20needs%20vegeables,%20of%20course.%20%20I%20love%20potatoes,%20so%20I%20peeled%20four%20Russett%20potatoes,%20washed%20four%20carrots%20and%20peeled%20four%20yellow%20onions,%20and%20cut%20them%20in%20half.%20%20I'm%20not%20a%20fan%20of%20cooked%20celery,%20but%20I%20set%20aside%20(and%20didn't%20photograph)%204%20stalks%20of%20celery%20with%20their%20leafy%20greens%20still%20attached.%20I%20prefer%20to%20add%20the%20celery,%20whole,%20to%20flavor%20the%20broth%20and%20then%20I%20toss%20it%20aside.%3C/p%3E%3Cp%3EFor%20years,%20I%20used%20to%20toss%20my%20vegetables%20into%20my%20stews%20%22raw%22.%20%20I've%20had%20a%20change%20of%20heart,%20by%20taking%20a%20little%20extra%20time%20to%20caramelize%20the%20vegetables%20in%20a%20little%20of%20the%20fat%20or%20olive%20oil.%20%20I%20think%20it%20adds%20more%20flavor.%3C/p%3E%3Cp%3EIt%20takes%20about%203-5%20minutes%20to%20caramelize%20the%20vegetables%20on%20medium-high%20heat,%20then%20remove%20them.%20%20Now%20that%20the%20pan%20is%20empty,%20and%20full%20of%20that%20dark%20crust,%20it's%20time%20to%20deglaze%20the%20pan%20with%20liquid--%20in%20this%20case,%20I%20used%20a%2014%20oz.%20can%20of%20Guinness%20Stout%20beer%20on%20very%20high%20heat.%20Scrape%20all%20the%20flavor%20off!%3C/p%3E%3Cp%3EI%20find%20that%20tomato%20paste%20and%20Worcestershire%20sauce%20adds%20so%20much%20flavor%20to%20stews.%20%20This%20prep%20time%20has%20taken%20about%20an%20hour,%20but%20the%20rest%20of%20the%20cooking%20will%20happen%20on%20it's%20own.%20%20Now,%20for%20the%20final%20steps:%3C/p%3E%3Cp%3EAdd%20the%20cooked%20vegetables%20and%20seared%20lamb%20back%20into%20the%20pot.%20%20I%20made%20my%20own%20beef%20stock,%20a%20few%20days%20ago%20(will%20post%20that%20recipe%20soon)%20so%20that's%20why%20it's%20light%20in%20color%20and%20looks%20like%20chicken%20stock.%20%20Boxed%20beef%20stock%20will%20do,%20too.%20%20Add%206%20cups%20of%20beef%20stock%20(or%20enough%20to%20just%20cover%20the%20meat%20and%20vegetables).%20Bring%20the%20stew%20to%20a%20boil,%20covered.%20Then%20reduce%20to%20a%20low%20simmer,%20and%20let%20is%20cook%20for%20about%203%20hours.%20%20Yes,%20you%20can%20finish%20this%20off%20in%20a%20slow%20cooker%20or%20even%20pressure%20cook%20it%20for%20about%2045%20minutes.%20%20On%20a%20rainy%20day,%20though,%20I%20love%20the%20smell%20of%20dinner%20wafting%20throughout%20the%20kitchen.%3C/p%3E%3Cp%3EI%20read,%20somewhere,%20that%20authentic%20Irish%20Stew%20has%20barley%20in%20it.%20%20While%20the%20stew%20was%20simmering,%20I%20cooked%201%20cup%20of%20pearl%20barley%20to%20a%20half%20and%20half%20blend%20of%203%20cups%20water%20and%20chicken%20stock.%3C/p%3E%3Cp%3EMy%20company%20arrived,%20and%20so%20I%20didn't%20take%20photos%20of%20the%20stew%20just%20as%20it%20finished%20it's%203%20hours%20on%20the%20stove.%20%20I%20did,%20however,%20taste%20the%20stew%20and%20then%20added%20salt%20until%20it%20had%20just%20the%20right%20seasoning.%20NOTE:%20When%20I%20make%20chicken%20or%20beef%20stock,%20I%20don't%20add%20salt.%3C/p%3E%3Cp%3EFinishing%20the%20stew:%20%20I%20like%20a%20thick%20gravy-like%20consistency%20to%20my%20stews.%20%20To%20accomplish%20this,%20I%20take%20about%204%20tablespoons%20cornstarch%20and%20whisk%20in%204%20Tablespoons%20of%20water%20until%20smooth%20and%20lump-free.%20%20On%20medium-high%20heat,%20I%20carefully%20add%20about%20half%20of%20that%20mixture%20and%20wait%20for%20a%20minute%20or%20two.%20%20I%20add%20more%20cornstarch%20mixture%20until%20the%20thickness%20I%20want%20is%20achieved.%3C/p%3E%3Cp%3EFor%20the%20optional%20barley:%20%20I%20debated%20if%20potatoes%20and%20barley%20made%20sense--%20two%20starches%20together?%20%20So,%20I%20poured%20half%20the%20stew%20into%20a%20smaller%20pot%20and%20added%20the%20barley.%20%20I%20loved%20it,%20and%20the%20barley%20thickens%20the%20stew--%20so%20I'm%20glad%20that%20I%20didn't%20too%20much%20cornstarch%20mixture.%20NOTE:%20I%20only%20used%20about%202%20cups%20of%20cook%20barley,%20so%20the%20rest%20will%20become%20a%20barley%20salad.%3C/p%3E%3Cp%3EGuinness%20Irish%20Lamb%20Stew%20and...%3C/p%3E%3Cp%3E(not%20pictured)%20A%20glass%20of%20cold%20Irish%20Harp%20Beer.%20%20Happy%20St.%20Patrick's%20Day!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20For%20those%20of%20you%20who%20aren't%20fond%20of%20lamb,%20because%20it%20tastes%20very%20strong--%20believe%20me,%20the%20lamb%20was%20not%20only%20buttery%20tender,%20but%20mild.%20%20I%20only%20wish%20I%20had%20invested%20in%20a%20couple%20more%20pounds%20of%20meat,%20because%20I%20loved%20it.%20%20My%20husband%20has%20been%20won%20over%20by%20this%20dish.%20%20Everyone%20had%20second%20helpings.%20%20I'm%20a%20convert%20to%20using%20Guinness%20in%20recipes,%20as%20it%20doesn't%20leave%20a%20%22beer%22%20taste.%20%20Instead,%20it%20adds%20a%20depth%20of%20flavor%20that%20is%20subtle,%20yet%20flavorful.%20%20This%20recipe%20makes%20a%20lot,%20and%20I'm%20so%20glad.%20This%20morning,%20it's%20raining%20and%20hailing%20and%20I%20plan%20to%20have%20it%20for%20lunch...again.%20%20%20You%20don't%20have%20to%20wait%20for%20the%20luck%20o'%20the%20Irish%20to%20make%20this.%20%20Keeper%20recipe,%20if%20I%20do%20say%20so%20myself--%20and%20one%20of%20my%20own%20creation.%20Yay!%3C/p%3E){kind=link}
