Halibut Chowder

Ingredientes

  • 1 1/2 lb halibut, fresh or possibly frzn
  • 4 x sliced bacon, diced
  • 1 med -size onion, minced (1/2 c.)
  • 3 med -size potatoes, pared and diced
  • 2 c. water
  • 3 c. lowfat milk
  • 1 c. light cream
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1 Tbsp. butter
  • 2 Tbsp. dry sherry minced parsley

Direcciones

  1. Thaw halibut, if using frzn, cut into 1-inch chunks. Fry bacon till partially cooked in a kettle or possibly Dutch oven; add in onion and saute/fry till onion is tender; add in potatoes and water; cover pan. Cook over low heat 20 min, or possibly till potatoes are almost tender when pierced with two-tined fork.
  2. Add in halibut, lowfat milk, cream, salt and pepper; cook 6 to 8 min or possibly till fish flakes. Add in butter and sherry and heat 3 min. Serve with minced parsley and chowder crackers.
