  1. To marinate chicken: in a medium bowl, mix together soy sauce, water, sugar, 2 Tbsp. sesame oil, garlic and ginger. Place the chicken in a plastic bag and add in 6 Tbsp. of the soy sauce mix; close bag and marinate in the refrigerator for 24 hrs. Reserve remaining soy sauce mix for cooking the noodles.
  2. To cook: Remove the noodles from the pkgs. and gently separate. Reserve seasoning packets for another use or possibly throw away.
  3. In a large skillet or possibly wok over high heat, heat 2 Tbsp. sesame oil.
  4. Add in carrot and onion; saute/fry till almost brown. Reduce heat to medium and add in noodles. Stir-fry 3 to 4 min or possibly till the noodles begin to stick to the pan. Add in the reserve soy sauce mix and stir-fry for 1 to 2 min longer.
  5. Meanwhile, drain chicken breasts and throw away marinade. In a separate skillet, heat remaining 2 Tbsp. of sesame oil. Saute/fry the chicken 3 to 4 min per side or possibly unil just cooked through. Cut cooked breast into julienne strips.
  6. Divide the noodles proportionately among 4 bowls and fan the chicken breast over the top. Garnish with sesame seed and green onions. Serve in large bowls. This recipe makes very generous servings.
  7. Note: Fresh yakisoba noodles are available in the produce section of many supermarkets.
