Ingredientes

  • 3 c. Cooked rice cooled to room temperature
  • 2 c. Canned black beans rinsed and liquid removed
  • 1 med Red onion, minced
  • 1 c. Cubed jicama (cut into 1/8-inch cubes)
  • 1/2 c. Sliced black olives
  • 1/2 c. Diced red pepper
  • 1/2 c. Diced green pepper
  • 1/4 c. Extra virgin olive oil, divided
  • 4 ounce Cubed cooked ham
  • 3 Tbsp. Red wine vinegar
  • 1 x Garlic clove, chopped
  • 1/2 tsp Grnd cumin
  • 1/2 tsp Chili pwdr
  • 1/2 tsp Salt
  • 1/2 tsp Grnd black pepper

Direcciones

  1. Combine rice, onion, jicama, olives, and peppers in large bowl; set aside.
  2. Heat 1 Tbsp. oil in large skillet over medium heat. Add in ham; cook 2 to 3 min stirring constantly. Add in to rice mix. Combine remaining oil, vinegar, garlic, cumin, chili pwdr, salt and pepper in small jar with lid. Shake to blend. Drizzle dressing over salad.
